Why is vanilla ice cream white but vanilla extract is brown?!


Question: Why is vanilla ice cream white but vanilla extract is brown!?
Answers:
It has to do with sugar and milk!. Vanilla extract is just cooked alcohol with a pressed vanilla bean (the whole bean, not just the seeds) in it!. The reason the extract itself is brown is because the alcohol pulls out the color along with the flavor of the vanilla bean while the bean is soaking in the alcohol!. The reason it doesn't turn the ice cream brown, I think it's just because there is so little extract in such a large vat of ice cream that it can't change the color of the entire vat of ice cream Hope this helps!Www@FoodAQ@Com

The white in vanilla ice cream is just the color of milk!. If you ever have ice cream with real vanilla you will see little black specs!. These are the seeds from the vanilla bean!. Vanilla bean is black, extract is dark brown because of the color degradation in making the extract!. Www@FoodAQ@Com
