Peach Chutney on Salmon while cooking or after?!


Question: Peach Chutney on Salmon while cooking or after!?
I made some homemade Peach Chutney yesterday and want to put it on my Salmon tonight!. Is it best to just spoon it on after cooking the Salmon or let it cook on top of the Salmon!? also, Can I keep my Chutney in the cupboard or is it best to re fridge it!?Www@FoodAQ@Com

By adding olive oil, chutney's may be used as a marinade for the salmon!.
Combine mixture in Ziploc bag!. Add salmon!. Refrigerate!. Marinate for 6-8 hours!.

I am a former chef and if your baking it then I would recommend the last few minutes, if your cooking it in a pan or on the BBQ again it is a last minute addition, as the sugars in the chutney like in BBQ sauce can scorch and turn bitter, try grilling/baking some peach halves with the salmon for a nice garnish!. Once opened it is best kept refrigerated for safety sakes!.Www@FoodAQ@Com

I would suggest to add a spoonful to the side of the plate so you can taste some salmon with it and some without, otherwise you may overpower the salmon!.
