We use both!. The plastic is easier to sanitize but we leave that on the counter and when we need to use the wood chopping board, we put it on top of the plastic one!.

The wood chopping block is so much more comfortable to use!. I just like the feel of it better!. We generally use wood when we use our cleaver for anything such as mincing, dicing vegetables or slicing meats!. For slicing veggies or making sandwiches we use the plastic!.

Immediately after using any board, we clean them!.Www@FoodAQ@Com

Wooden chopping boards were banned in industry kitchen years ago in favour of plastic because they harbour germs more easily!.

At least plastic boards can be soaked and sterilised, and when they get a bit "well worn" they can be scraped down to a new layer of un-scratched plastic!.

Having said that, as a chef and vegetarian, I prefer cutting on wood at home - much better on the knife!

a constant argument!. Plastic seems like it is more "cleanable", but unless you boil it, stuff hides and grows in the scratches and slices!.These scratches are finer than those found in wood, and tend to kind of "self seal", locking in germy goodness!.
And wood is wood!. God knows how many things grow on that!. But at least it's not hidden!. Best bet is to use one for veggies, one for meat, regardless of whether they are wood or plastic!. This lowers the instances of cross-contamination!.Www@FoodAQ@Com

I'm learning about this as I go!. I'm a big fan of wooden boards, but when working with raw meat you need to use plastic boards!. That is the easiest way to keep them germ free!. You basically clean them under scolding hot water, whereas a wood board would absorb the raw juice even after cleaning!. Www@FoodAQ@Com

I use wood!. You can keep both germ free by washing!. If you are really concerned every so often use diluted bleach on your board (wood or plastic)!. Face it, you don't need a germ free house!. In fact that is ultimately unhealthy!. Www@FoodAQ@Com

I can't give you statistics, but I always use my plastic boards for meat, and my wood for all the vegetables, bread, etc!. I can sterilize the plastic boards, where as I can't soak or use bleach on my wood board!.Www@FoodAQ@Com

I prefer to cut meat on glass boards!. Everything else on plastic!. I soak my plastic boards with a bit of "milton" sterilising solution then wash!.Www@FoodAQ@Com
