I hate dry meatballs...?!
Why do my meatballs always come out dry!. Can somebody please give me a recipe for juicy meatballs!.!.!.!.haha this is making me giggle!.!.!.but really!.!.!.HELP ME! please :] Www@FoodAQ@Com

It all has to do with temperature!.!.!.
The thing is that the US has a label that states in restaurants and food products that meat must be cooked at high temperatures etc etc!.!.
(this is something i noticed the last time i travelled to the U!.S)
Well if you cook meat at high temperatures (any type of meat) it will dry out!.!.!. Because cell walls (cell membranes) break when exposed at extremely high temperatures and dehydrates the cell therefore ending up with dry food!.!.!. It also breaks up the cuternary and terciary structures of proteins making them acquire a stiff texture
Therefore to have nice juicy MEATBALLS cook them at a lower temperature but increase the cooking time!.!.!. also cook the meatballs in some tomato sauce or something so it will give humidity to the meatballs!.
If youre using an oven put a small pyrex bowl with some water on the side so that water can evaporate and incorporate into the meat, preventing dryness!.!.!.

Are you making just meatballs with no sauce!? I make mine with sauce!.
1lb ground beef 1/2 lb turkey meat
1/3 c bread crumbs
2 eggs slighten beaten
1/ 3 tsp salt
1/3 tsp bk pepper
1/4tsp minced onions
1/4 Italian seasoning
mix all ingredients in a bowl do not over mix
form into balls and let rest for 15 in
You can deep fry them for 10 minutes, drain and let rest
Mushroom sauce
1 can mushroom soup
1 can mushroom pieces( drain and rinse)
1 tsp gravy master
1/3 tsp garlic powder
1/3 tsp onion powder
1/8 tsp season salt
1/3 tsp bk pepper
mix with 1 cup of milk
combine all wet ingredients stir well
Place meatballs in dutch oven or pot pour sauce over meatballs, let simmer for atleast 15 minutes ( can add sour cream 1/4 cup at the last 5 min) Serve over rice or buttered noddlesWww@FoodAQ@Com

Directions

2 Use your hands to form the mixture into about 24 walnut-sized balls!.
3 Spread the flour on a plate and coat the meatballs!.
4 Heat the oil in a skillet, add the meatballs and cook over high heat for about 3 minutes, turning to brown all sides!.
5 Lower the heat a little and cook for about 12 minutes or until cooked through!.

Don't add to much breading!. I also bake mine in the oven and just keep close eye on them!. As soon as they are done take them out the the oven, and remember they will continue to cook for a few minutes, so you could even pull them a little early!. What do you eat them with!? Finish them off the rest of the way simmering in whatever sauce you are having them with!.Www@FoodAQ@Com
Well I happen to watch alot of the food channel and Ive seen cheffs making meatballs with their breadcrumbs being soaked in milk before adding to their meat mxture - You do have to squeeze out all the excess moisture though before adding it! It definitley stops them from drying out!.Www@FoodAQ@Com

Either cook them in sauce or add a little sauce to the recipe!. also, cooking them while covered will help hold in the moisture!.Www@FoodAQ@Com
