i want to make diane sauce to go with my steak!. the one with mushrooms in it!. i only need the recipe for the sauce not how to cook the steak thanks!.Www@FoodAQ@Com

Despite web recepies-which i have looked at and are way off so far,,THIS is correct and a tried and tested recepie!.
Firstly you need a demi-glaze!.this you can achieve by using stock from beef you have cooked,or if not don't dispair as bovril 3 teaspoons will do nicely!.Add a glassful of madiera wine or brandy best to add a tspn of sugar if you use brandy)and a wineglass and a half of water and salt and pepper to taste!.Boil until it reduces by half and becomes gelatinous!.
Next lightly soften a small onion (or half a large) in a frying pan with a LITTLE olive oil,when golden and soft add thinly sliced button mushrooms until soft!.Add a generous dash of brandy and flambe-yep set it on fire,,,this will go out by itself !!,add about 3 tablespoons of the demi glaze turn down to a medium heat add a tablespoon of french mustard (dijon if possible) add a medium carton of single cream and season to taste!.

Ingredients

* 1 garlic clove, crushed
* 2 tablespoons lemon juice
* 1 tablespoon tomato sauce (ketchup)
* 1 tablespoon light sour cream
* 1 teaspoon Dijon mustard
* 2 teaspoons worcestershire sauce (Use vegetarian version to make this recipe vegetarian!.)
* 1 tablespoon flat leaf parsley, chopped

Directions
Mix all ingredients together!. Simmer in a non-stick frying pan for 5 minutes!.
