Making the perfect southern fried chicken...?!
How do i create that very tasty sort of fatty layer under the breadcrumb coating, like they have in KFC =)
also, should a boil the chicken before coating it and frying it!?

Ingredients
1 whole chicken, cut into 10 pieces (2 legs, 2 thighs, 2 wings, 4 breast)
4 cups water
3 teaspoons salt
1 cup buttermilk
2 eggs
1 tablespoon Season-All salt
1 cup flour
2 tablespoons cornmeal
2 teaspoons dried oregano
2 teaspoons Season-All salt
vegetable oil or shortening (for frying)
Directions
1Soak chicken in water and salt at least 2 hours in the refrigerator!.
2Mix buttermilk, eggs and Season All and dip chicken pieces in this mixture!.
3Combine 1 cup flour, 2 tbsp corn meal, 2 tsp dried oregano, and 2 tsp Season All in a bag!.
4Drop two pieces of dipped chicken in the bag at one time!.
5Shake to coat!.
6Place on wire rack to rest!.
7(I place wax paper under the rack to catch any flour that falls off!.) Heat a shallow layer of oil or shortening to 360 F in a jumbo chicken skillet (cast iron is great for this job) or an electric skillet!.
8Place the chicken in the pan, trying not to crowd the pieces!.
9Cover for the first five minutes!.
10Check the chicken!.
11When golden brown, turn!.
12Cover for the next five minutes!.
13Remove cover and cook uncovered, turning occasionally, as needed for a total of an additional 20 minutes or until cooked through!.
14Watch carefully, and don't allow it to get too dark!.
15If it's frying too fast, reduce heat slightly!.
16NOTE- the key is to cover in the beginning to start the cooking process inside the chicken, but to uncover during the last part of the cooking time to get the outside nice and crispy and golden brown!.

Dry chicken with paper towels!. Dredge in flour mixture, place in
milk/eggs, and then back to flour mixture!. Do this one piece at
a time making sure that there is total coverage over entire
surface of chicken in each step!.

at home!. If you are using a deep fryer, fry a few pieces at a
time for about 20 minutes, covered, turning occasionally!.
Likewise, if pan frying, cook, covered, turning occasionally

of a large piece to check for doneness!.

Ok, the heat is too high if your burning anything, you need to start the fat in a skillet that is cast iron or a heavy non stick!. Thin aluminum skillets will cause uneven heat distribution!.

Have grease hot enough so that when you put a drop of flour in it it will start sizzling!. Coat each piece of chicken both sides with salt, pepper and garlic salt!. When ready to cook dredge each piece one at a time in flour coat each side and put in grease!. Once pan is full put a lid on it and cook for 5 minutes after 5 minutes turn and put lid back on and cook 5 minutes turn every 5 minutes and put lid back on until chicken is done!. Clean the chicken pieces, pat them dry and dip in the egg bath and then the flour, egg bath again and flour again!. Yep, double dipping!. But your coating will stay on!.
Make sure your oil is hot enough to fry!. I do this by inserting the end of a wooden spoon in it!. If it bubbles around the tip the oil is ready!. No harm to the tip of the wooden spoon!. Better than a thermometer!.

frying chicken in deep fryer can be tedious!.!.!.as it will be under cooked and burnt on outside if not careful!.!.if it does start getting too done on the outside and you cut into a piece and still see it bloody you need to finish baking in the oven!.!.
I Always soak in butter milk and i like mine spicy so i add flour red pepper black pepper salt ,Lawry's salt etc!.!.
