I am a big Mexican cuisine fan!. The genius in Mexican cooking is in its simplicity!.

First time visitors to my home to eat Mexican, get a Mexican Flan for dessert!.

Mexican Flan

8 eggs
1 (14 ounce) can sweetened condensed milk
1 1/2 teaspoons vanilla extract
1 teaspoon almond extract

1 1/2 cups white sugar

Preheat oven to 300 degrees F
9 inch round cake pan!.
Roasting pan or any large iron frying pan for water bath!.

In medium sauce pan or very small frying pan, cook sugar, stirring constantly, until it liquefies!. When it starts to turn light brown, remove from heat and quickly pour into waiting cake pan and quickly swirl it around a bit to coat the pan completely and evenly!.

Let cool!.

Combine eggs, condensed milk and vanilla and with med speed mixer until smooth!.

Pour egg mixture over liquid sugar!.

Place baking inside roasting pan, and place roasting pan on oven rack!. Fill roasting pan with water to reach halfway up the sides of the baking dish!.

Bake 60-70 minutes in the preheated oven, or until knife inserted in center comes out clean!.

Remove pan from water bath and let cool completely, about 1 hour!. Run a knife along the edge of the pan, place a serving plate on top and invert!.

It is rich compared to American custard so slice like a pie into somewhat smaller pieces!. Where pie is 6ths, make the flan 8ths!.
