What's wrong with my ricotta cheese?!


Question: What's wrong with my ricotta cheese!?
I used to cook a lot of Italian years ago!. I got away from cooking for myself the past two years or so!. Now, that I am back to cooking for myself, I am cooking a lot of Italian again!. However, I have noticed that my stuffed ricotta shells are no where near as good as they once were!

I am not sure if I add too much egg, or maybe there were another brand, or ricotta has lost is quality!.!.!.!. I add egg to ever eight big table spoons or so!.!.!. oregano, stuff and bake!. (I tried adding a spritz of parmesan and YUCK!.!. so that's not it!)

Is it dependent on the brand or what!? What am I doing wrong!? Help!? Www@FoodAQ@Com

Are you using the same type of ricotta cheese!? There are so many available now: skim milk ricotta, whole milk ricotta, 2% milk ricotta, and ricotta not made from cows' milk!. (It may be buffalo, but I don't quite recall!.) Check to see if you are using a different type of ricotta!. That would be my first guess!.

If you are using the same kind of ricotta, keep experimenting with changing just a little each time you make it!. Change only one thing at a time, of course, so you'll know which change worked!Www@FoodAQ@Com
