Well I find that Costco sells a fantastic tub of garlic butter and one of my favourite things to make is plain garlic bread with that!.!.!.so I just take a long baguette sliced in half lengthwise , butter it and grill till browned!.

Now if you want bruschetta, do that firstly, and then do the following:

Chop some vine-ripened about to burst tomatoes, the juicier the better, and chop up fresh parsley (aka cilantro) and I like to add chopped fresh basil too!. Finely chop two garlic cloves, chives (or onions!.!.!.I don't like it too oniony) add salt to taste and drizzle with the finest olive oil!. I also like to add my dad's home-made wine vinegar!.

Just top the crisped garlic bread with this and eat as is or pop back into the oven for a few minutes on GRILL!.!.!.you may add parmesan before popping it back into the oven, or even sliced fontina cheese!.

I like to buy those rock hard almost crouton like bagels or pita bread!.!.!.you might wonder what you do bread that's been cooked and hard as a rock!.!.!.well you take THIS mixture, add a little more water to it all, a dash more olive oil, and saturate the bread and pop it into the oven!.

It will re-hydrate the bread and that is the BEST bruschetta you will ever have trust me!.

My grandma taught me all those wonderful recipes and I'm sure glad I paid attention!

6 roma (plum) tomatoes, chopped
1/2 cup sun-dried tomatoes, packed in oil
3 cloves minced garlic
1/4 cup olive oil
2 tablespoons balsamic vinegar
1/4 cup fresh basil, stems removed
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1 French baguette
2 cups shredded mozzarella cheese

DIRECTIONS
Preheat the oven on broiler setting!.
In a large bowl, combine the roma tomatoes, sun-dried tomatoes, garlic, olive oil, vinegar, basil, salt, and pepper!. Allow the mixture to sit for 10 minutes!.
Cut the baguette into 3/4-inch slices!. On a baking sheet, arrange the baguette slices in a single layer!. Broil for 1 to 2 minutes, until slightly brown!.
Divide the tomato mixture evenly over the baguette slices!. Top the slices with mozzarella cheese!.
Broil for 5 minutes, or until the cheese is melted!. Www@FoodAQ@Com
