Question: What is the difference between an etoufee and a creole !?
i looked up an etoufee recipe and it looks like the creole recipe that i use!.Www@FoodAQ@Com

They have the same origins!.Etouffe is roux-based, while creole almost always has tomatoes in it!.Creole gumbo, for example, has both roux & tomatoes!.Www@FoodAQ@Com
