OK, all other things aside, there is a trick to flash freezing fresh veggies!. First put a cookie sheet in the freezer!. Now, prep your veggies!. Sliced, diced, chopped, blanched, whatever!
Now that your veggies are ready, place them on the cold cookie sheet (without layering) and put back in the freezer!.
Check them in about 15 minutes, they should be frozen!. Place them in a zip lock bag and ,using a straw, suck out the air while zipping the bag shut!.
Congratulations! You just made vacuum packed, frozen veggies, but even better, you know where the veggies came from!Www@FoodAQ@Com

I buy frozen spinach at the store all the time, so it cant be too bad for it!.
From what I remember a friend of mine used to do, part of the trick is getting it frozen very quickly!. Whenever he was going to freeze anything that he wanted to retain nutrients or flavor, he would package it in an airtight container and then use dry ice to freeze it quickly!. He would do everything from vegetables to french fries, hamburgers, etc!.!.!. They always ended up tasting good when he reheated them so something worked!. Im sure it would be fine for blending!.Www@FoodAQ@Com

Yes, you can freeze it!. My personal preference would be to blanch the greens!.!.!.just for a minute or two!. The nutritional loss won't be significant!.
You could experiment with spinach!. Make a smoothie using a good brand of commercially frozen spinach and see what you think!.
I would probably cook the beets!.!.!.not fork tender but until just done!.
I haven't tried freezing raw beets!. I've only frozen them cooked for use in borscht (beet soup)!. You could freeze one or two beets just to see how it would work out!.
