Ingredients
1000 ml milk
3 teaspoons corn-starch
3 tablespoons sugar
1 light beaten egg
50g vanilla chocolate
Whipped cream

Action
a!. In a sauce-pan, combine milk, corn-starch and sugar!.
b!. Cook on low fire till the mixture is smooth!.
c!. When done, pour half out and flavor to taste!.
d!. Add the egg and vanilla chocolate to the remaining in the sauce-pan!.
e!. Put in a mold, alternately the dark and light!.
f!. Serve with whipped cream!.

Caramel Rolls

Ingredients
720g flour
110g butter
1 yeast cake
50 ml lukewarm water
500 ml scalded milk
2 eggs
100g sugar
200g brown sugar

Action
a!. Dissolve yeast into the water!.
b!. Melt butter in milk, add sugar, yeast, eggs and flour!.
c!. Beat until light and set aside until it double its bulk!.
d!. Divide dough into 2 parts!.
e!. Roll out half of the dough thin and cover with melted butter,
sugar and cinnamon!.
f!. Roll in a long roll and cut in 4 cm pieces!.
g!. Butter pan, spread brown sugar in bottom of the pan!.
Sprinkle with water!.
h!. Place rolls 2 cm apart and let raise!.
i!. Cook for 1!.5 hours and turn upside down on the oil paper!.


Banana Fritters

Ingredients A
Bananas
Lemon-juice
Sugar

Preparation
a!. Peeling and soak them 5 minutes,
in a little lemon-juice, and sugar!.
b!. Cut them in long slices!.

180g flour
1 tablespoon butter (melted)
1/8 teaspoon salt
1 teaspoon warm water
3 egg whites (beaten stiffed)
Powdered sugar
Cooking oil

Action
a!. In a bowl, combine flour, salt, butter and warm water!.
b!. Stir until very smooth!.
c!. Just before using, stir in the stiffly beaten egg whites!.
d!. Dip the bananas in batter and fry in deep hot oil!.
e!. Sprinkle powdered sugar over each piece and serve hot!.


Banana Jumbles

Ingredients
4 bananas
2 cups rolled oats
1 cup raisins
40 ml olive oil
1/4 teaspoon sea salt
1 teaspoon vanilla extract
1/2 cup chopped walnuts
cinnamon powder

Action
a!. Preheat 180°C oven, for 10 minutes!.
b!. Mix all together, and season for 15 minutes!.
c!. Drop by teaspoonfuls onto the baking sheet, and dust
with the cinnamon!.
d!. Bake for 15-20 minutes, and serve hot!.


Orange Ice Cream

Ingredients
400g sugar
250 ml water
500 ml orange juice
250 ml milk (scalded)
2 egg yolks (well beaten)
500g cream

Action
a!. Boil the sugar and water together to a thick syrup!.
b!. Remove from the fire, add the orange juice,
put aside and let cool!.
c!. Meanwhile pour the milk over the egg yolks!.
Stirring constantly!.
d!. On the fire, cook this egg mixture for about
3 minutes, until slightly thickened as for custard!.
e!. Cool, stir in the cream, mix with the orange syrup,
and freeze in a freezer!.

Note: You may used half cream and half
evaporated milk instead of only 500g cream!.


Special Cake

Ingredients
7 egg whites (beaten stiffed)
7 egg yolks (beaten stiffed)
1/4 teaspoon salt
1/4 teaspoon cream of tartar
200g sugar (sifted 3 times)
120g flour (sifted 3 times
Orange flavoring

Action
a!. Mix the whites and yolks!.
b!. Add salt and cream of tartar and mix well!.
c!. Fold in sugar and flour, then flavor!.
d!. Bake in a 140°C oven for 45 minutes!.

Strawberry Shortcake

Ingredients
2 soft sponge cakes dough
110g butter
130g powdered sugar
crushed strawberries
whole strawberries (sweetened with powdered sugar)

Action
a!. Filing two round buttered cake tins with the soft dough!.
b!. Bake just before dinner, butter the top of the cakes slightly!.
c!. When done, leave them in the oven with the door open!.
d!. Mix butter, powdered sugar and crushed strawberries to
make sauce!.
e!. When ready serve the dessert!. Put one cake on a large,
pretty plate!.
f!. Cover the cake with whole berries,
and put on the other layer!.
g!. Cover this also with berries and pour the sauce over it!.
h!. Serve at the table, cutting as usual, and putting extra
berries beside each piece!.

Note:
a!. Add more strawberries to thin the sauce and color!.
b!. This cake makes a wonderful dessert and it is a heavy dessert!.

Black and White Brownies

Difficulty: Easy
Prep Time: 20 minutes
Cook Time: 40 minutes
Yield: 20 servings

12 ounces semisweet chocolate
1/2 cup butter
For the cream cheese batter:
6 tablespoons butter
9 ounces cream cheese
3/4 cups sugar
3 eggs
3 tablespoons flour
1 tablespoons vanilla

For the chocolate batter:
6 eggs
2 1/4 cups sugar
1 1/2 cups flour
1 1/2 teaspoons baking powder
1 1/2 teaspoons salt
1 tablespoons vanilla
3/4 teaspoons almond extract


Preheat oven to 350 degrees F!.
Melt chocolate and 1/2 cup butter and set aside to cool!.

To make the cream cheese batter, with a whip attachment cream 6 tablespoons butter than add the cream cheese and continue mixing!. Add the sugar, beat until fluffy then beat in the eggs, then flour, and vanilla!. Set aside!.

For the chocolate batter, in a separate bowl whip the eggs and sugar until fluffy!. Stir together the flour, baking powder, salt, and mix into egg mixture!. Mix in the melted chocolate and butter, and the extracts!.

In a rectangular pan, lined with parchment, spread half the chocolate mixture!. Spread the cream cheese layer over that to cover, then drop remaining chocolate batter by spoonfuls on top then swirl with a knife!. Bake for 40 minutes!. Cool and cut into bars!.

Cinnamon Peanut Brittle

Difficulty: Easy
Prep Time: 5 minutes
Inactive Prep Time: 30 minutes
Cook Time: 10 minutes
Yield: 25 to 35 servings

1/2 cup water
2 cups sugar
1/4 teaspoon cream of tartar
1 cup light corn syrup
2 teaspoons ground cinnamon
2 tablespoons unsalted butter
2 cups roasted salted peanuts
1 teaspoon baking soda

Combine the water, sugar, cream of tartar and corn syrup in a medium-size heavy saucepan fitted with a candy thermometer!. Bring to a boil over medium heat!. After it boils, stir the mixture occasionally!. Boil the mixture until it reaches 340 degrees F!. The color should be deep golden brown!. Remove from the heat and, working quickly, stir in the cinnamon with a wooden spoon!. Stir in the butter until melted, then the peanuts and baking soda!.
Pour the mixture onto the oiled cookie sheet with sides and spread it out a bit with the back of a wooden spoon, to about 1/4-inch thickness (it may not fill the whole pan)!. Let harden, uncovered, in a cool place, 30 to 45 minutes!. (To wash the saucepan, soak it overnight!.)

Using your hands, and wearing cotton or plastic gloves if desired to keep off any fingerprints, break the brittle into pieces!. Store in an airtight container!.

White Chocolate–Coated Grapes with Orange Curd

A fine layer of white chocolate gives both green and red grapes a creamy crunch!. The orange curd dipping sauce could not be simpler; it’s hard to imagine a more elegant use of the microwave!.


ingredients

CURD
2 cups fresh orange juice
4 large egg yolks
1/4 cup sugar
3 tablespoons unsalted butter, cut into 1-inch pieces

GRAPES
4 ounces white chocolate, chopped
1 tablespoon vegetable oil
1 pound green or red grapes, stemmed and chilled
2 tablespoons confectioners’ sugar


directions

Make the curd: In a saucepan, boil the orange juice until it’s reduced to 1/3 cup, about 12 minutes!. Let cool!.
In a microwave-safe bowl, whisk the egg yolks with the sugar!. Whisk in the reduced orange juice and stir in the butter!. Microwave the mixture on high power for 1 minute, until thickened!. Whisk until smooth!. Press a piece of plastic wrap directly onto the curd and refrigerate until chilled!.

Make the grapes: Line a rimmed baking sheet with parchment paper!. In a microwave-safe bowl, combine the white chocolate with the oil!. Microwave for 1 minute, until the chocolate is just melted; whisk until smooth!. Let cool!.

Dry the grapes with a towel and set them in a large bowl!. Pour in the chocolate, folding to coat!. Sift the confectioners’ sugar on top and stir until the grapes separate; transfer to the baking sheet and refrigerate for 10 minutes, until the chocolate sets!. Serve the grapes in glasses with the orange curd in ramekins alongside!.

Trifle works great for a larger party

Large bowl, preferably footed - or a trifle bowl

Prepare two batches of vanilla pudding
Thaw a big container of whipped topping (not fresh - it needs to have the gelatin in it to keep shape)
Bake or purchase a pound cake and cut into 1/2" slices
Seedless raspberry jam
Godiva liquor or Chambord
Seasonal fruit, washed, peeled, etc!.

In a very small pot, warm the raspberry jam and add liquor to taste!. (if you want the taste, but not the alcohol, let it simmer very slowly to evaporate the alcohol)

Brush each side of the slices of poundcake and make one layer in the bottom of the bowl!.

Add a layer of pudding

Add a layer of fruit

Add a layer of whipped topping

Repeat until the bowl is full!. Use remaining fruit to decorate top!. Cover with plastic wrap and put in the fridge for a day or two for the flavors to meld!.

Looks awesome and tastes even better!.

layer the bottoof your bowl with brownies (either store bought gooey brownies or homemade!

MALVA PUDDING WITH IDEAL MILK SAUCE
Tantalizing Treat

Ingredients

60 g margarine
250 ml flour
250 ml milk
5 ml apricot jam
5 ml bicarbonate of soda Salt to taste
125 ml sugar
10 ml vinegar
5 ml baking powder
1 Egg

Sauce

250 ml sugar
125 ml butter
125 ml boiling water
250 ml ideal milk

Method
? Beat egg and sugar well!. Cream in butter!.
? Mix bicarbonate of soda and milk together!. Set aside!.
? Blend all other ingredients into butter mixture!. Add milk and blend well!.
? Turn batter into greased oven tray and bake for 40-60min till skewer inserted into the centre comes out clean!.
Sauce
? Mix all ingredients over low heat!. Pour warm sauce over hot pudding, pricking pudding with skewer to absorb the sauce!.

OR

SAGO GUAVA, BANANA SUMMER PUDDING

Ingredients

180 ml sago (soaked in water)
6x250 ml milk
1 large can nestle cream
1 large tin ideal milk
375 ml sugar
1 large tin guava can fruit lightly liquidize to pulp
5 bananas cut into circles

Method
? Boil milk and sago together till sago is transparent!.
? Add sugar and simmer!. Leave to cool!.
? Mix nestle cream, ideal milk well together!.
? Liquidize guavas to light pulp!. Add all mixtures together!. Cut bananas into circles and mix well!.
? Serve chilled, with dollop of cream if desired!.
Note: this pudding does not set!. It is a milky, thick and creamy soft pudding!.

Multiply all the ingredients by 9 for a serving of 40 people!.

Red Velvet Cake

2? cups self-rising flour
1 cup buttermilk
1? cups vegetable oil
1 teaspoon baking soda
1 teaspoon vanilla
? cup red food color
1? cups sugar
1 teaspoon cocoa
1 teaspoon vinegar
2 large eggs

Preheat oven to 350°!. Combine all ingredients in a large mixing bowl and beat with mixer until well blended!. Pour batter equally into three well- greased or sprayed cake pans!. Bake 20 minutes!. Cool in pans 10 minutes!. Remove from pans and cool completely!.

Frosting
1/3 pound butter softened
1 8-ounce and 1 3-ounce package cream cheese softened
1 pound box powdered sugar
2 cups chopped pecans
1 teaspoon vanilla

Combine butter, cream cheese, powdered sugar and vanilla in a bowl!. Beat until fluffy!. Add chopped pecans!. Frost between layers, top and side of cake!.

Great looking cake, that tastes even better, for Christmas or Valentine's Day!.



Miniature Cheesecakes

1 1/2 packages (8 oz size) cream cheese
1/2 cup sugar
2 eggs
3/4 tsp vanilla


Topping:
1 cup sour cream
1/4 cup sugar
1/2 tsp vanilla
strawberry or pineapple preserves

Let cream cheese soften in a medium size bowl; add 1/2 cup sugar, and cream together thoroughly!.

Add eggs, on at a time, beating well after each addition!.

Add 3/4 tsp vanilla and beat until smooth and creamy!.

Place paper cupcake (foil if you have them) in a muffin tin and using a teaspoon, fill each one 2/3 full!. Bake in a preheated 300 F oven 20 to 25 minutes!. Cool 10 minutes (cakes will cave in slightly in center)!.

Make topping: In a small bowl, thoroughly mix sour cream, sugar and vanilla!. Using a teaspoon top each with a small amount, enough to cover the top!. Top with small amount of preserves in center of each cake!. Return pan to oven and bake an additional 10 minutes!. Makes about 2-3 dozen!.



Better Than Sex Cake

1 box Duncan Hines Cake Mix, white or yellow
1 (3!.5oz) Instant vanilla Pudding
1 cup Sour Cream
1/2 cup milk
1/2 cup vegetable oil
1 stick softened butter
4 eggs
1 Package chocolate chips
1 oz!. grated German chocolate
1 cup chopped pecans

Icing:
1 (8oz) soft cream cheese
1 pound powdered sugar
1 teaspoon vanilla
1 cup chopped pecans
11/3 coconut

Oven temp: 350
Baking time: 1 hour
Pan type: bundt

Preheat oven, grease and flour the pan

Mix the first 7 ingredients for 2 minutes,
Stir in chocolate pieces, grated chocolate and nuts!.
Place in prepared pan and bake until toothpick comes out clean!.
Cool in the pan for 25 minutes
turn out and cool completely

Frosting:
Beat cream cheese until light and fluffy!. Beat in the powdered sugar and vanilla!. Stir in nuts and coconut!. Frost the cooled cake!
