Cream Cheese Biscuits Good w/chocolate gravy

2 cups Bisquick or other baking mix (TRY 1)
4 ounces cream cheese
1/2 to 1 tablespoon milk

These biscuits are extra simple, but they are a perfect match with chocolate gravy!. Combine Bisquick or other baking mix and cream cheese!. A pastry blender works beautifully!. Add enough mik to moisten the dough!. It’s really a preference thing!. Put the dough on a lightly floured surface, and knead it a few times!. Roll out the dough to whatever thickness you like, cut out, and place on a greased/sprayed/Silpat-ed baking sheet!.

The number of biscuits is based on the thickness of your rolled out dough & the size of the cutter!. So from 6 to 12!. Bake at 425 for about 12 minutes or until browned!.


Home made Bisquick
2 C all purpose flour
1 TB sugar
1 ts salt
1/3 C lard or shortening (I used butter!)
1 TB bkg powder
Sift or mix ingredients!.

Biscuits
Ingredients:
Two cups of flour
1 tablespoon of baking powder
1 teaspoon of sugar (can add more to taste)
1/2 teaspoon of salt
1 stick of butter, cold (8 tablespoons)
3/4 cup of buttermilk, cream or half-and-half

Method:
Preheat the oven to 450 degrees!.
Mix all the dry ingredients together!.
Cut the stick of butter into pieces, and work into the flour mixture with your hands or a pastry blender until it resembles pea-sized crumbs!.
Add the liquid, mixing until a bit loose and sticky!.
Pour dough out on a floured surface, and knead for a minute!. Dough should be smooth and no longer wet!. You can sprinkle more flour on the surface if you find it’s sticking!.
Take dough into a ball, and hit it with a rolling pin, turning it and folding it in half every few whacks!. Do this for a couple of minutes!.
Roll out dough until it’s 1/4 of an inch thick, and then fold it in half!.
Using a round cutter (can use a glass or a cup if don’t have a biscuit cutter) cut out your biscuits from folded dough!.
Place on a greased baking sheet close together (so they rise up not out), and bake for 15 minutes or until the tops are golden brown!.
Makes 10-12 biscuits!.

If you don’t want to roll and cut them out, after kneading and beating the dough you can drop the dough onto the baking sheet with a spoon!. They’re not as symmetrical (dropped biscuits are also known as cat head biscuits) but they’re no less delicious!.

Preheat oven to 425 degrees!.

Add two cups of self rising flour to a bowl!. Gradually add and mix in 1 cup of milk!. This will make a stiff dough!. Add 1 T!. oil and mix well!. Flour your workspace well, pour dough onto workspace and knead lightly until dough is light and no longer sticky!.

Heat 2 T!. oil in ovenproof baking dish in oven!. Remove from oven!. Pinch off a golfball size piece of dough, shape into a flat circle, dip top into hot oil then place in the pan!. Complete with all the dough!. Bake for 15 - 20 minutes or until golden brown!. Remove from oven and brush tops with melted butter!.

Edit: this is an old standard recipe that I learned many years ago from my ex mother in law (full blood Choctaw Indian, and an excellent cook)!. Just be sure to use a light touch when kneading and handle your dough as little as possible to keep your biscuits light and fluffy!.

You can also use bacon drippings in lieu of the oil which gives a good flavor to the bread for breakfast!.Www@FoodAQ@Com

I have never seen a biscuit recipe using oil!. Shortning is actually one of the main ingredients to any biscuits!.
