Silpat question for baking?!


Question: Silpat question for baking!?
I made chocolate chip cookies yesterday and used a Silpat (silicone baking liner) for the first time!.

I made the cookies as directed and baked them for the 9-10 minutes needed!. When they were supposed to be done, they were a gooey mess!. I decided to give up on using that and use parchment paper instead!. The next batch came out perfect!.

Does Silpat require extra baking time!? The cookies from all batches were the same size and the oven temperature was fine!.Www@FoodAQ@Com

I use a silpat every time I make cookies!. I have for at least the past 5 years or so!. It is my all time favorite baking accessory!. I make cookies about twice a week and I have never had to bake them longer!. They come out perfect every single time!. Make sure that you use a real silpat!. The imitation ones are thicker and can make your food taste and smell like plastic!. I do not work for Silpat, but I should!. I love love love Silpat!!Www@FoodAQ@Com

Short answer yes!.

The relatively thick silicone acts as an insulator between the cookies and hot baking sheet!. Of course the bottom won't be as crunchy relative to the done-ness of the top, but sometimes this is good!.

Silpat is good, but not for *everything*!. Actually I think it's great for cookies, but it does take another couple of minutes!. Not good for US Southern-style biscuits!.!.!.Www@FoodAQ@Com

I have noticed with my own silpat liners it does take longer to bake so went back to my parchment papers just like you!. Ive always been told there shouldnt be a difference in baking times, but WRONG ahh yea there is!.!. So keep doing what your doing and enjoy what ever it is you make!. I know I doWww@FoodAQ@Com

I also have the original sil pat liner and it does not add any cooking time to cookies or other things i bake on my silpats I have 4 of them and use them all every week without any problems at all!.Www@FoodAQ@Com

yes, and be sure to remove them quickly or they will burn after coming out of the oven Www@FoodAQ@Com
