Happy First Day of Autumn! My favorite season always puts me in a baking mood. What are your favorite recipes?!
Here in northeastern Pennsylvania we are having blue skies and beautiful autumn temperatures!. It is the perfect day to play in the kitchen!. So many choices but what do I make!? Is it the wonderful baked goodies that send scrumptious aromas throughout the house!? Or is it the hot homemade soups/stews that warm our bellies!? What are your favorite recipes!? Www@FoodAQ@Com

These are my favorites!. The crock pot recipes can be made in the oven at 325F for half the time shown!. Except the chicken and dumplings which is usually cooked on top of the stove on low for about 2-3 hours!.
Moms Sweet & Sour Meatloaf
Sauce:
2 small cans tomato sauce
1/4 cup Worcestershire sauce
1/2 onion chopped
1 tablespoon dried parsley
1/2 cup brown sugar
Mix all sauce ingredients together in bowl, set aside!.
Ingredients (Meatloaf):
2 pounds ground beef
1/2 chopped onion
1 egg, beaten
1/2 cup or more if needed, quick oatmeal (not instant)
1 teaspoon garlic salt
In another bowl add ground beef, 1/2 chopped onion, egg, oatmeal, garlic salt, pepper, and 1/3 of the sauce mixture!. Mix together well!.
Place in pan, making space between meat and pan around edges with fingers!. Flatten top, spread more sauce over top and cook 1 hour, at 350F!. Drain off grease half way (30 min) and add more sauce!. Reserve some sauce for adding when served!. The oatmeal disappears, is healthy and you can't taste it!. It just holds it together better!. Add more if you need it!.
Savory Roast Beef
3-4 lb roast
1 can cream of mushroom soup
3 tb steak sauce (optional)
1 can water
1 package dried Lipton onion soup mix
Place roast in crock pot!. Add steak sauce to top and spread to coat evenly!. Add cream of mushroom soup on top spreading to coat!. Sprinkle onion soup on top and add water!. Cook on low for about 8-10 hours or until meat separates easily!. Serves 4!.
For French Beef dip sandwiches: French Rolls, roast beef, and Au Jus Mix with a little of the drippings from the roast added for dipping!. Horseradish Sauce if you like it!.
Split Pea, Ham, & Sausage Soup
12 oz dried split peas
2 -14 oz cans beef or chicken broth
16 oz polish or kielbasa sausage, cut in bite size pieces
1 cup chopped ham
1 cup chopped carrots
1 onion, chopped
1 bay leaf
salt and pepper, to taste
Soak peas overnight in water, drain!. Put peas, broth, ham, carrots, onion, bay leaf and seasonings in crock-pot!.
Brown sausage in skillet and add to crock-pot!. Fill to 2” from top with water, cover, and cook on low for 10 hours or high for 5 hours!. Remove lid for last hour to thicken or add cornstarch mixed with cold water to soup!. Remove bay leaf!. Serve with cornbread and honey butter!.
Chicken and Dumplings
1 whole chicken
1 bay leaf
2 tsp garlic salt
6 black peppercorns
6 cups of water
1 cup baby carrots
1 package refrigerator biscuits (10 – 12)
Place chicken in crock pot and add everything except carrots!. Cook on low for about 8-10 hours!. Remove chicken and de-bone!. Pour broth into large pot on stove and heat until boiling!. Add carrots and cook for 30 minutes!. Thicken broth with cornstarch or flour mixed with cold water!. Tear refrigerator biscuits into 3-4 pieces each and drop into boiling broth, lower heat and cover!. Simmer for about 5 minutes, until biscuits puff up!. Add chicken and carrots, stir, and serve!.
Morning Glory Muffins
2 cups flour
1 ? cups sugar
2 tsp baking soda
? tsp salt
2 tsp cinnamon
3 lg carrots, grated
? cup nuts, chopped
? cup coconut
1 apple peeled and grated
3 eggs
1 cup oil
2 tsp vanilla
? cup raisins
Mix dry ingredients together!. Stir in carrots, raisins, apple, nuts and coconut!. Beat eggs with oil and vanilla!. Stir in to dry ingredients until combined!. Fill greased muffin tins 2/3 full!. Bake at 350 for 20 minutes!.
Hot Fudge Pudding Cake
During the baking a cake layer forms on top and a rich chocolate sauce appears on bottom!. Serve with vanilla ice cream or whip cream!.
1 cup Bisquick or biscuit/pancake mix
1 cup sugar
3 tablespoons plus 1/3 cup of unsweetened cocoa powder
1/2 cup milk
1 tsp vanilla
1 2/3 cup hot water
Powdered sugar (optional)
Mix bisquick, 1/2 cup sugar and 3 tbs cocoa in a greased 8 inch square baking dish!. Stir in milk and vanilla until well blended!. Sprinkle evenly with remaining 1/3 cup cocoa and 1/2 cup sugar!. Pour on water!. Bake in preheated 350 F oven for 40 minutes or until top is firm!. Dust with powdered sugar!. Serve at once in bowl with sauce spooned over cake!. Make 6 servings!.

Make your preferred homemade crust, or use a roll-out!. Blind bake for about 10 minutes!.
Cut up a mixture of your favorite apples (Braeburn, Granny Smith or Fuji work best, maybe one Golden Delicious for the taste)!. Mix in cinnamon, nutmeg and about a 1/4 c sugar with 1/2 t lemon juice!. Put into pie crust and bake about 40-50 minutes!.
Top with ice cream!.
You can also make a variation - apple won tons, by just purchasing the won ton sheets in the store!. Sprinkle with raw sugar before baking about 20 - 25 minutes!.

I made this for supper tonight and it was delicious (and very Autumnal):
Golden Onion and Cider Soup (serves 4)
1kg white onions, peeled and finely sliced
75g unsalted butter
500ml dry cider
1 sprig fresh thyme
1 bay leaf
1 litre chicken stock
200ml pouring cream
Salt and freshly ground black pepper
To serve: a loaf of crusty white bread
1) In a pan, sweat the onions in the butter until golden brown!. Add the cider and boil gently until reduced by half!.
2) Add the thyme, bay leaf, stock and cream and simmer for 30 minutes!.
3) Season to taste and serve with a warm loaf of crusty bread!.

2 cups all purpose white flour
? teaspoon nutmeg
1 teaspoon cinnamon
1 teaspoon baking soda
1 teaspoon salt
4 cups apples, peeled, cored, diced
? cup chopped pecans
Mix all ingredients well!. Pour into greased and floured Bundt pan!. Bake one hour at 350 degrees!.
This cake also very good made with fresh pears!.

5 tbs!. unsalted butter, softened
10 C unseasoned dry bread crumbs
1 tbs!. olive oil
3/4 lb!. mild Italian sausages
1 lb!. mushrooms, washed with stems trimmed and quartered
1 large yellow onion
2 large carrots, peeled and chopped
2 large stalks of celery, chopped
1/2 C minced fresh parsley
1 tbs!. fresh thyme leaves
1 tbs!. fresh sage
1 tsp!. salt
Pepper
3 large eggs, lightly beaten
4 C chicken stock
Preheat oven to 350 F!. Coat a deep 9 x 13 baking pan with 1 tbs!. of butter!. Place the breadcrumbs in a very large mixing bowl!. In a saute pan, heat the oil over medium-high heat, and swirl to coat the pan!. Cook the sausages until lightly browned!. Drain all but 3 tbs!. of fat and let cool!. Add the mushrooms to the pan and saute, stirring frequently, until lightly browned!. Add to the bread in the bowl!. Add the remaining 4 tbs!. butter to the saute pan!. Melt and swirl to coat the pan!. Add the onion, carrots, and celery!. Saute, stirring frequently, until soft and lightly browned!. Add the parsley, thyme, sage, salt and pepper, and saute one minute longer!. Add this mixture to the breadcrumbs and stir!. Cut the sausages into 1/4" rounds and add to the stuffing!. Add the beaten eggs and the stock to the bowl, and mix well!. Place the stuffing in the greased pan and bake, uncovered, until the top is lightly browned and crusty, about 1 hr!.Www@FoodAQ@Com

Well here is my first attempt at putting my recipe from my head that I have never written down!.I like to make a pork stew that is very aromatic and very tasty!.I start by slicing a half of a sweet onion, vadalia if possible!.Half of a green or red pepper 4 cloves of garlic!.I like fresh herbs when available so I would have 1 tbls of fresh oregano 2 bay leaves salt and pepper to taste!.first I saute my onions and green peppers till onions are lucent then i add garlic salt and pepper and oregano!.Then i add the cubed pork you choose what cut you like!.I brown the meat then add water and 1 can of tomato sauce 8!.oz, 1 can of cut tomatoes italian style!. I cube potatoes cut fresh green beans 1 can of corn 3 sliced carrots!.let it stew if you like other vegetables feel free to to improvise!.I like to serve it over some white rice, some of my friends like it just as it is!.Www@FoodAQ@Com

how to prepare any winter squash
It's really not that hard to make delicious winter squash!. First off, wash your winter squash and stab it a few times!. (No Norman Bates imitations!. Go easy!.) Next, put your stabbed darling into a preheated (350 degree oven) for about 10 to 15 minutes, depending on the size!. Throw it right on the rack no pan necessary!. When the time is up, pull the squash from the oven and set it aside!. Now futz with your salad or whatever else you need to do to get dinner ready!. When the squash is cool enough to handle, proceed with the peeling and deseeding and cubing of your gourd!. Place in a baking dish and bake till tender!. You can add a little orange juice, water, broth anything to give it a little moisture!. Top with a little bit of herbs, too!. If you used orange juice, try some cinnamon or nutmeg!. If you added water, go with just about anything!. If you used broth, a little sage or thyme works well!. When the squash is tender, it's done!. Use a fork to smash it into a puree, add a little honey or maple syrup if you cooked it with cinnamon and nutmeg and enjoy you’ve earned that delicious squash!

1 acorn squash (1-1/2 lb!.), cut lengthwise in half, seeded
2 slices OSCAR MAYER Bacon
2 Tbsp!. maple-flavored or pancake syrup
1 Tbsp!. KRAFT Balsamic Vinaigrette Dressing
PLACE squash, cut-sides up, in microwaveable dish; cover with plastic wrap, turning back one corner to vent!.
MICROWAVE on HIGH 12 to 14 min!. or until squash is tender!. Meanwhile, cook bacon 8 to 10 min!. or until crisp, turning occasionally; drain!.
MIX syrup and dressing; brush onto squash!. Crumble bacon; sprinkle over squash!.
Nutrition Bonus:
Good news! This easy-to-make squash provides 1/2 cup of vegetables out of the recommended 2-1/2 cups vegetables per day!.
