They are pretty easy!. Make sure you use short grain rice, I usually use sushi rice!. Cook the rice the same as you would sushi rice (1 1/4c rice, 1 1/2c water!. Rinse rice until water runs clear, put into pot with water, bring to boil quickly!. Once it is boiling, put the lid on and reduce the heat!. Simmer for 10 minutes, remove from heat, and keep the lid on for 15 minutes!.)
To shape the onigiri, you can use molds, cookie cutters or just your hands!. I always use molds of cookie cutters!. If using molds, wet them a bit with water, put the rice in and squish down with the other half of the mold!. Sometimes they are a bit hard to get out, but they shouldn't break if you squished them enough!.
If using cookie cutters, put the cutter on the counter, and line with saran wrap (it doesn't have to be well lined, I just kind of drape it in)!. The same principle as the mold - put the rice in, and squish it down with your fingers or a spoon!. Lift the saran out, and there you have it!
Some tips: wet your fingers with water to avoid the rice sticking!. I season the rice the same as I would if I were making sushi - flavoured rice wine vinegar!. You can make them ahead of time and freeze them, if you do it is best to microwave them for 10-15 seconds before they thaw!.
