Answers:
This is my basic sauce recipe and you could add cheese without a problem!.
The problem I see is that if you add the sauce and cook too long it may thicken up too much!.
I would let them cook in a little stock and then when it is nearly ready add the sauce!.
Sauce:- White
2T!. Butter!.
2T!. All-purpose flour!.
? t!. Salt
1/8 t !. White pepper!.
1C!. Milk!.
Makes about 1 cup!.
In a small saucepan over medium heat, melt butter!.
Add flour, salt and pepper, stirring constantly, until bubbly!.
Stir in milk!. Heat to simmering, stirring or whisking constantly until thickened, about 1
minute!. Add cheese and continue stirring!.

It is something I would like to fiddle around with, as chicken portions or chicken chunks would cook differently!.
