If i marzipan a cake and put sugarpaste on the top how long does it take before its not edible?!


Question: If i marzipan a cake and put sugarpaste on the top how long does it take before its not edible!?
I used to ice cakes with royal icing and that lasts ages so a girl can fiddle with detail on it, but sugarpaste appears to be the stuff to use now, and I just dont know if it has a life span once put on top of marzipan!. Can you help pleaseWww@FoodAQ@Com

I am a former chef and in North America the sugar paste icing or plastic icing is known as rolled fondant and it can be warmed to coat Petit fours also, as far as going bad your safe for at least awhile, I was involved with a lady who ran her own Wilton Cake Decorating school and have my Masters level in decorating!.

I know women who have frozen the cake tops for years, in the frig the icing will get wet and weep, outside it will dry out so covered and in a cool spot is best, I would guess at least 4-6 weeks before air bourne dust and bacteria might have an effect!.Www@FoodAQ@Com

Sugarpaste is fabulous stuff!! also called plastic icing it lasts for ages and is probably a little safer from a food safety point of view as it does not contain egg white like royal icing has!.

If the seal between the cake and marzipan, and marzipan and sugarpaste is tight the cake you should be okay, A chocolate or carrot cake may not last as long, but a classic fruit cake will last for ages as the fruit ferments and gets better with age - it used to be that the top layer of a wedding cake was kept and either eaten on the first anniversary or at the christening of the firstborn!. Give it at least a year or more!.

The sugarpaste is usually a little "soft" when first applied, let it dry out for a couple of days and then fiddle away

I have not heard of sugar paste but wonder if it is the same as fondant icing!? Fondant icing is maleable and is rolled out like pastry and then usedto cover Christmas and Birthday cakes!. I think it will lasta few months in an airtight container especially if it is on top of marzipan!. I t is more likely to deteriorate if it is placed directly on top of cponge or fruit cakeWww@FoodAQ@Com
