I have the perfect solution!. I am not that great at making omelets, and someone sent me an email about Ziploc Omelets and I make them all the time!. I love spinach and cheese omelets!. The best part, NO MESS!. I have copied the body of the email - it's also aimed at cooking for guests!. There were some pictures included - will forward if interested!.
ZIPLOC OMELET
(This works great !!! Good for when all your family is together!. The best part is that no one has to wait for their special omelet !!!)
Have guests write their name on a quart-size Ziploc freezer bag with permanent marker!.
Crack 2 eggs (large or extra-large) into the bag (not more than 2) shake to combine them!.
Put out a variety of ingredients such as: cheeses, ham, onion, green pepper, tomato, hash browns, salsa, etc!.
Each guest adds prepared ingredients of choice to their bag and shake!. Make sure to get the air out of the bag and zip it up!.
Place the bags into rolling, boiling water for exactly 13 minutes!. You can usually cook 6-8 omelets in a large pot!. For more, make another pot of boiling water!.
Open the bags and the omelet will roll out easily!. Be prepared for everyone to be amazed!.
Nice to serve with fresh fruit and coffee cake; everyone gets involved in the process and a great conversation piece!.

actually it's two things, call them ingredients or not but the temperature of the heat source and the cooking time!. you want it at med/high to cook fast but not burn or evaporate the moisture!. and not too long because it too will cause the air and moisture will escape, making your omelet flat and dry, two things that make an omelet taste gross!.The ingredients that make it taste good are totally up to you, it is best to cook the fillings before hand in the pan and then add your egg/milk beaten goodness!. then fill it with cheese once it firms up!. Okay yes eggs a re very important in omelet's like many people suggested but another important ingredeint is air!. Here my tips on making a Great omlet!.

Probably cooking at to high of a a heat!. Here is my perfect omelet method!.
Cook what ever ingredients you want in the omelet first i!.e!. bacon mushrooms, bell pepper, ham etc!.!.!.!.!. (Yes even ham so it's not cold on the inside of your omelet!.) Except the cheese!.
Whisk together the eggs with a little milk or water, your choice but just a quick splash!. Or put them in the blender for a really light and fluffy omelet!.
Heat a medium sized pan on hi!. Add butter, olive oil what ever fat you want to use!. When the pan and oil are heated pour in the egg!. Immediately reduce the heat to medium low!.
Using a spatula (I like the rubber ones best for this part) slowly scrape the edges in!. The runny egg will fill in, in the "wake"!. Work your way around the pan until there is no more super runny egg!.
Add the toppings and cheese, using a nice wide and firm spatula fold the omelet in half!. Turn off the heat and leave for about 30 seconds, flip over and let the omelet cook on residual heat for another 30-45 seconds!. Slide out of the pan and if you are serving it to someone else then top with a little more cheese, and 1 piece of each of the toppings so that it is obvious what is inside

For me it is don't overcook or brown up the eggs!. also make sure your eggs are really fresh so your omelet will be light and fluffy!. Www@FoodAQ@Com
Eggs beaten well with milk!. Cook over medium heat, covered with plenty of steam: Makes 'em fluffy!. I like baby shrimp, onions, salsa and cayenne for a spicy cajun style omlette!.
