Wow!! What a poorly written recipe, no wonder you are confused!.

Shortening is a fat so that would cover things like butter, margarine, lard etc!. whereas oil is, well, just oil!. So we need to throw some shortening in here too!.

So how about we re-write that recipe like this:

Ingredients
7 large eggs, seperated
2 Cup all purpose flour
1 1/2 cup sugar
1 teaspoon baking powder
1/2 teaspoon salt
3/4 cup milk
1/2 cup melted butter
1 1/2 teaspoon vanilla essence
2 teaspoon grated lime rind
1/2 teaspoon cream of tartare

Method
1!. Whip the egg yolks well until light coloured and thick!.
2!. In a seperate bowl, mix the flour, sugar, baking powder and salt!.
3!. Add the above mixture into the egg yolks together with the milk and melted butter!.
4!. Whisk together well!.
5!. Add vanilla essence and lime zest
6!. Whip the egg whites and cream of tartare until stiff and fold gently into the egg yolk mixture!.
7!. Pour into lined tins and bake at 350"F for 20 - 25 minutes!.

Make the glaze according to the recipe and off you go!.

Now because I'm estimating the milk and butter amounts, I would add about half first, see what the consistency is like!. If it is too thick, add the rest!. If that is still not enough add 1/4 cup oil and about 1/3 cup water!. Do that again if it is still to thick until you get the right consistency!.
The batter should be like that of any other cake

Wow, that recipe is messed up!. Personally, I'd try to find another key lime cupcake recipe from a different website!. That's a lot of eggs to put into a recipe, especially with all that water!. And then add milk too!? With only 2 cups of flour, the recipe seems to have way too much liquids!.

Www@FoodAQ@Com

you list the ingredients!.!.
how do you know you need to add those extra ingredients!?Www@FoodAQ@Com
