How do you make pork curry?!

Pork Curry
4 Boneless Pork chops, lightly pounded
1 Tbsp!. Ground Five Spice (star anise, cinnamon, clove, fennel, black pepper)
1/2 Cup Vegetable Oil
1/2 Cup Water
1/2 Cup Coconut Milk
1 1/2 tsp Yellow Curry Powder
1 Macintosh Apple, diced in 1/2 inch cubes
1/2 Cup Dried Cranberries
1/4 Cup Cream
Salt and Pepper to taste
Pre-Heat Oven to 325 degrees
Rub the Pork with the Ground Five Spice!. Heat oil in a large oven proof skillet, place the Pork chops in the pan and sear on all sides till browned!. Add the water and put the skillet in the oven for 25 minutes, till the pork is cooked through!. Remove the pork from the pan and set it aside to rest!. Meanwhile de-glaze the pan with the Coconut Milk, then add the Curry, Apples, dried Cranberries, Cream, Salt and Pepper!. Stir over medium heat till it thickens somewhat and reduces by half!. Spoon some of the sauce on each plate, and place the chops on plates, spoon the remainder of the sauce over the pork chops!.

I am a former chef and the last girl is partially right, I make a west indian one like in Trinidad, I use shoulder pork chops and I like thick ones, I do mine in the crockpot, I made it once for a caribbean friend and he swore up and down it was goat!?
I like to pre-brown my chops and onions with a touch of garlic and ginger, and get the stock in the crockpot going with the curry spices, and then add the pork chops and get them simmering and add a few potato's and even a few red lentils to thicken the sauce, I like it hot so I add a few scotch bonnet peppers but mild is fine to!. I cook it until the potato's are done and the pork chops are falling apart, so 3-4 hours of slow cooking, I like something on the bone it has more flavour but you can find pork stew meat/leg chops and it is fine to only will take 2-3 hours depending on how large you cut the potato's, or even leave them out and add a can of drained chickpeas as your starch instead, if you want to add veg like peas, carrots or turnips fine, its you dish, I am a plain person myself and I serve it in the Trindadian way over fresh boiled chow mein noodles stir fried with a bit of garlic!.Www@FoodAQ@Com
