How to prepare scallions?!
I've never cooked with scallions before!. When a recipe calls for 1/2 diced scallions do they want you to dice up the green part of the scallion or the white part of the scallion at the endsWww@FoodAQ@Com

If they're supposed to be sauteed or cooked, I use most of the white parts and some green!. If they're supposed to be lightly cooked or fresh, I use all green parts!.Www@FoodAQ@Com
A scallion, also commonly known as spring onion, green onion or salad onion, is associated with various members of the genus Allium that lack a fully-developed bulb!. They tend to be milder tasting than other onions and may be steamed or set in salads in western cookery and cooked in many Asian recipes!. Diced scallions are often used in soup, noodle and seafood dishes, and in sauces in eastern dishes, after removing the bottom quarter-inch or so of the root end!.

Depends on the recipe, scrambled!. For eating, like crudites, I just clean them and cut off a bit of the root end and trim the green parts!. I like to eat them dipped in a bit of salt!.
When using in recipes, I treat them the same way as far as trimming!. However, some of my recipes ask that they be chopped with some of the green parts!. Of course, I do as they say!.
Sometimes I use them like shallots, just the white parts then, and chop them!.
Occasionally, I will chop the green parts to use on top of baked potatoes, much like chives!. They are versatile and can be utilized many different ways!.Www@FoodAQ@Com

when i chop them i just cut off about half a centimeter off both ends and align them up vertically and then chop!.

I usually cut off the little root bit and chop all the rest!. Sometimes the end of the green part is wilted and I remove that!. I use them in salads, and also in frittate!.Www@FoodAQ@Com
