Mix together flour,salt,shortening, milk, baking powder and 2 tbls sugar!.Roll dough an inch thick, spread with chopped apples!. Roll up and cut into 1 1/2-inch slices!. Combine sugar and 2 cups water in a pan and heat to boiling!. Place rolls in baking pan of hot syrup!. Sprinkle with sugar, cinnamon and butter and bake in moderate oven until brown!.
****Apple Cookies---Apple drop cookies are made with brown sugar and sour cream, along with chopped apples and raisins!.
Cook Time: 15 minutes

Makes about 3 dozen apple cookies!.
****SPICED APPLE SAUCE COOKIES
1/2 cup shortening
1 cup sugar
1 egg
2 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon ground cloves
1/2 teaspoon ground cinnamon
1 cup unsweetened applesauce
Cream together the shortening and sugar!. Add egg; mix thoroughly!.
Sift flour, then measure!. Sift measured flour with salt, baking soda, baking powder, and spices!.Add dry ingredients to creamed shortening and sugar, alternating with applesauce, then dry ingredients, etc, until all is combined!.Drop by tablespoonfuls onto lightly greased cookie sheets and bake in a preheated 375°F oven 8 to 10 minutes or until golden along edges!.

12 apples
10 lumps sugar
1 quart brandy
1 quart boiling water
2 quarts Jamaican rum
Wash apples and place in a shallow casserole or baking dish!. (Pull off any stems but do not peel or core)!.Bake the apples at 350F, uncovered, until softened, but not falling apart!.Transfer the apples to a Crockpot!.In a medium saucepan, dissolve the sugar in boiling water; stir in rum and brandy!. Pour over the apples in Crockpot!. Cover!.
Adjust Crockpot temperature to heat but do not allow to boil (we have noticed that the newer Crockpots are more likely to boil when set to low - on some of these units, use the "warm" setting, otherwise set temperature to low)!.Allow the toddy to brew for 5 hours before serving!. It can be left for up to 9 hours from the start!.Serve in small mugs or heat-proof glasses!.

1 1/2 cups rice
3 1/2 quarts water
3 1/2 teaspoons salt
6 to 8 apples
2 tablespoons sugar
1 teaspoon cinnamon
Cook the rice in boiling salted water!. Drain and dry!. Wash, core, and pare the apples!.Wring out small pudding cloths, or squares of cheese cloth, in hot water!.Spread the rice 1/3 inch over the cloth and place apples in the center with one teaspoon of sugar mixed with one-sixth teaspoon of cinnamon in the center!.Draw up the cloth around the fruit until it is covered with rice!.Tie in the apples, being careful not to have the rice and cloth in folds, and steam until fruit is tender, 1/2 3/4 of an hour!.Serve with lemon sauce or cream!.

8 medium Granny Smith apples, chopped
1/4 cup butter
1/2 cup brown sugar
1/2 teaspoon cinnamon

Melt butter in a heavy skillet over medium-low heat!. Add apples, brown sugar, cinnamon and nutmeg!. Sauté 15 to 20 minutes, or until apples are tender!. Serve as a side dish for pork or with breakfast!. Serves 6

Apple Gingerbread Cobbler
4 medium apples, sliced
1/2 cup firmly packed brown sugar
1 tablespoon lemon juice
1/4 teaspoon cinnamon
1 cup plus 3 tablespoons water
2 tablespoons cornstarch

Preheat oven to 350 degrees F!.
Cook apples, sugar, lemon juice, cinnamon and 1 cup of water until apples are almost tender!.

Combine 3 tablespoons water with cornstarch, stirring until all lumps are removed!. Stir into apples and cook until thickened!. Pour into an 8-inch baking dish!. Add topping!. Bake 35 minutes!.

1/2 cup buttermilk
1/4 cup molasses
2 tablespoons oil
1 egg
3/4 cup granulated sugar
1 cup flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ginger
1/4 teaspoon nutmeg

Beat together the milk, molasses, oil, egg and sugar!. Measure remaining ingredients into sifter and sift into egg mixture!. Stir only until combined and pour over apple mixture!.

/2 cup light brown sugar, packed

1/2 teaspoon ground nutmeg
1/3 cup all-purpose flour
1/3 cup granulated sugar
1/3 cup rolled oats
4 tablespoons cold butter (1/2 stick)

Preparation:
Peel, core and chop the apples; toss in a bowl with lemon juice!. In a separate bowl, combine the brown sugar, cinnamon, and nutmeg; add to the apples and toss to combine!.
In another bowl combine flour, sugar and oats!. Cut butter into 8 small pieces, and cut butter into flour with a pastry blender or two forks until mixture is crumbly!. Stir in the chopped nuts!.

Butter a 9-inch square baking dish!. Spread apple mixture in bottom of baking dish then sprinkle with flour mixture!. Bake at 375° for 30 to 45 minutes, or until apples are tender and topping is lightly browned!.

Serve warm or at room temperature, with vanilla ice cream or a little heavy cream, if desired!.

Ingredients
2 apples (diced)
2 teaspoons ground cinnamon
2 large eggs
200 ml vegetable oil
62!.5 ml brewed coffee
1!.5 teaspoons Rum extract

300g plain flour (shifted)

1 teaspoon salt
150g Raisins and roasted almonds

CARAMEL APPLES!.
INGREDIENTS:

* 1 package (15 ounces, or about 50 candies) vanilla caramels, unwrapped
* 2 tablespoons water
* dash salt
* 6 wooden skewers
* 6 apples, washed and dried
* finely chopped peanuts or pecans

PREPARATION:
Melt caramels with the water in top of double boiler over simmering water!. Stir frequently until melted and smooth!. Stir in salt!. Stick a skewer into the blossom end (not stem end) of each apple!. Dip apple in caramel and turn to coat completely!. If syrup is too thick, add a few drops of water!. Immediately roll the bottom of coated apple in chopped peanuts or pecans!. Set on a baking sheet lined with waxed paper!. Chill until firm!.
Makes 6!.

* 4 cups peeled, cored, sliced apples
* 1/4 cup water
* 3/4 cup all-purpose flour
* 1 cup granulated sugar
* 1 teaspoon ground cinnamon

INGREDIENTS:

* 2/3 cup honey
* 3 tablespoons red cinnamon candies, red-hots
* 2 tablespoons grated orange peel
* 1 cup orange juice
* whipped cream or whipped topping
* 6 medium tart apples

PREPARATION:
In a saucepan combine the honey, candies, orange peel, and orange juice!. Bring to a boil and cook until candies are dissolved, stirring frequently!. Peel and core the apples; arrange in an 8-inch baking dish!. Pour the hot syrup over the apples!. Bake uncovered at 350° for 1 hour, or until apples are tender, turning occasionally!. Serves 6!. Top each serving with some of the juice and whipped cream or topping!.

Apple Dumplings
Ingredients:

* 2 cups sifted flour
* 2 teaspoons baking powder
* 1 teaspoon salt
* 1/2 cup shortening
* 3/4 cup milk
* 6 apples, peeled and cored
* sugar, butter and cinnamon
* 1/2 cup brown sugar, packed
* 1/3 cup butter
* 1 1/3 cups hot water
* dash of cinnamon
* dash of nutmeg

Preparation:
Sift together flour, baking powder and salt; cut in shortening!. Add milk; stir to form soft dough!. On a lightly floured board, knead to shape then roll out to 1/8-inch thickness!. Cut into 6 squares, about 6 to 7-inches each!. Place an apple on each square!. Top each apple with a little sugar, a dab of butter and a generous sprinkling of cinnamon!. Bring dough up to cover apple and pinch edges to seal!. Place in greased pan, sealed edges under!.
Combine brown sugar, butter, hot water, nutmeg and cinnamon; pour over dumplings!. Bake at 450° for 15 minutes!. Reduce heat to 350° and bake until done!.

Baked apples:
