Answers:
You can use either of the following with great success
Baileys, Kahlua or Tia Maria
I've used each in different cheesecakes I've made and they've all turned out great!.
Go for it!

You have quite a collection! I would go with the triple sec just because it has the light orange flavor or maybe the cherry brandy!. The others don't sound like they'd go good in that mix!. Or, you could always substitute some vanilla flavoring (much smaller amount)!.Www@FoodAQ@Com

Imitation rum flavoring, and extra water!. If the dessert is put in the oven, the alcohol is all burned out of it, so you don't have to worry about ppl getting drunk off it!. It is more for the flavor!.Www@FoodAQ@Com

Based on the ricotta and not much other info, I'd probably try the Kahlua or the Bailey's!. If cherry goes with the other ingredients, I'd try the cherry brandy!Www@FoodAQ@Com
