What does simmer mean?!


Question: What does simmer mean!?
when a recipe or chef says let simmer does that mean leave over high or low heat!?!?Www@FoodAQ@Com

To reduce the heat just enough so that the water which you are boiling is no longer at a rolling boil!.Www@FoodAQ@Com

Essentially, simmering means cooking at a temperature rather below the boil (as low as 140F for fish, maybe 180 or 190 for land meat)!. The idea is that boiling often cooks things (especially meats) too fast to properly denature proteins and complex carbohydrates in the food; you can turn vegetables to mush and meat to rubber by boiling them too much!. Simmering cooks slowly and gives the proteins and carbs time to break down into something you can chew more easily; it's basically a wet version of what you do when you barbecue!. Www@FoodAQ@Com
