Do you have a "secret sauce" recipe that is good on hamburgers?!


Question: Do you have a "secret sauce" recipe that is good on hamburgers!?
Extended family and some others are planning a cookout this weekend, and I thought I'd bring a "secret sauce" for the hamburgers!. I want to avoid the ones that are like Thousand Island dressing variants, such as they use at McDonald's, because that is too common!.

Heat 1 cup heavy cream on the stove to hot and whisk in 4 oz!. (or more) of bleu cheese, 1 tsp!. salt, 1/2 tsp!. garlic powder, 1 T butter, dash pepper, dash nutmeg and simmer until the cream reduces to a sauce!.

Why not mix up a few sauces!?

Chipotle Ketchup:
1 c ketchup
1 1/2 tsp chopped chipotle chiles from canned chipotles in adobo plus
2 tbs adobo sauce from can
2 tsp (or more) balsamic vinegar

Horseradish Sauce:
1/4 c mayonnaise
1/4 c sour cream
1 tbs Dijon-style mustard
2 green onions, finely chopped
2 tsp prepared horseradish

Jalapeno Mustard:
1/2 c mustard
2 tbs honey
1 bunch green onions, thinly sliced
1/4 c cilantro leaves, minced
4 garlic cloves, minced
1 jalapeno, minced

Spicy Ranch Sauce:
1 c mayo
1 c sour cream
1 bunch cilantro, chopped
6 tbs lime juice
4 green onions, chopped
2 tbs jalapeno, chopped seeded

I mix the following:
1/2 cup mayo
1/4 cup sourcream
1 teaspoon hungarian paprika
1/2 teaspoon cracked pepper
1/4 cup minced olives with pimento
1 tablespoon minced green onion
This is better the second day so if time permits make it up ahead of time!. I like to use butter cheese melted on top of the burgers!.Www@FoodAQ@Com

My secret is a little bit of mustard and some Worcestershire sauce!. It gives it that little kick! also, ground garlic and chopped onions!. Oh but cooked in together :) Sorry I didn't realize it was for ON the hamburger!.Www@FoodAQ@Com

Sure, try chili sauce mixed with sweet pickle relish!. Or if you prefer a mayo!. based sauce, mix mayo!., honey Dijon mustard and horseradish for something really different!. Www@FoodAQ@Com

*****Alfredo Sauce
1 cup Parmesan cheese
1/2 cup heavy cream
pepper to taste
1/2 cup butter
Grate cheese!. Cut butter into quarters!.In glass serving bowl, combine cheese, butter and cream!.Cook at MEDIUM 3 - 4 minutes or until butter melts!. Stir well!.
*****Garlic Sauce
1 1/2 oz (45gm) Butter
1 Onion, finely chopped
2 Cloves Garlic, crushed (As always, adjust garlic according to taste)
1 Glass Dry White Wine (How big a glass is up to you!)
Salt and Pepper
1 oz (30gm) Flour
1/2 pint (280 ml) Milk
Melt 1/2 oz (15gm) butter in a pan, add the chopped onions and cook gently until soft and golden!. Add the garlic and cook for another minute or so!. Season with salt and pepper to taste!. Add the wine, turn up the heat and reduce the volume by about half!. Remove from heat!.In another pan melt the remaining 1 oz (30 gm) of butter!. Add the flour, stir and cook for about five minutes!.Now add the milk!. If you've never made a white sauce before, the key is: take it slowly!. Add just a little milk, stir well, then a little more!. At first the result will look like a pastry!. After a little more milk it will resemble an elastic dough!. Beat this smooth!. Then as you add the rest of the milk a little at a time keep stirring!. You'll end up with a nice thick sauce!.Mix in the onion and garlic and you're done!.Serve the garlic sauce warm!.
******BARBECUE SAUCE FOR HAMBURGER
1 onion
2 tbsp!. fat
2 tbsp!. vinegar
2 tbsp!. brown sugar
4 tbsp!. lemon juice
1 c!. catsup
3 tbsp!. Worcestershire sauce
1/2 c!. mustard
1/2 c!. water
1/2 c!. celery
Salt
Cayenne pepper
Saute chopped onion and celery in oil!. Add rest of ingredients and simmer about 30 minutes!. Add a little more water if needed!. Add browned (crumbled) hamburger that the fat has been drained off!. Simmer a few minutes longer!. Serve on buns!.
****Sweet Chili-Lime Sauce
2 tablespoons bottled sweet chili sauce
2 teaspoons lime juice
1/2 teaspoon fresh grated ginger
1/4 teaspoon minced garlic
Stir together all ingredients until blended!.
*****Southwest Cream Sauce
(16-oz!.) container sour cream
1 garlic clove, minced
2 tablespoons finely chopped red onion
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/2 teaspoon ground red pepper
1/4 teaspoon salt
2 tablespoons chopped fresh cilantro
2 tablespoons fresh lime juice
Whisk together sour cream; garlic, red onion; chili powder; cumin; ground red pepper; and salt!. Whisk in cilantro and lime juice until smooth!. Cover and chill until ready to serve
*****Brown Butter and Lemon Sauce
5 tablespoons unsalted butter
2 tablespoons fresh lemon juice
2 tablespoons capers, drained
Melt the butter in a large skillet or saucepan over medium heat!. Continue to cook until it turns golden brown (but not dark brown)!. Remove from heat!. Add the lemon juice and capers and stir!. Pour or spoon the sauce over hamburger patties or fish!.
*****Cheddar Cheese Sauce
1 teaspoon stick margarine or butter
3 tablespoons all-purpose flour
1 1/2 cups 1% low-fat milk
1/2 cup (2 ounces) shredded reduced-fat sharp cheddar cheese
1 tablespoon dry sherry
1/4 teaspoon salt
1/4 teaspoon ground red pepper
1/8 teaspoon onion powder
1 (2-ounce) jar diced pimento, drained
Melt margarine in a small saucepan over medium heat!. Stir in flour; gradually add milk, stirring with a whisk until blended!. Cook until thick (about 10 minutes), stirring constantly!. Remove from heat; add cheese, stirring until cheese melts!. Stir in sherry and remaining ingredients!.
*****Tarragon Cream Sauce
1/2 bottle (1 1/2 cups) white wine
1 small yellow onion, thinly sliced
1/4 teaspoon black pepper
2 sprigs fresh tarragon, plus 1/2 tablespoon chopped leaves
1 cup heavy cream
1/4 teaspoon kosher salt
In a large saucepan, over medium-high heat, bring the wine, onion, pepper, and whole tarragon sprigs to a boil!. Reduce heat and simmer, uncovered, until the mixture is reduced by two-thirds, 20 to 25 minutes, depending on size of pan!. Remove and discard the tarragon sprigs!. Add the cream, reduce heat, and simmer gently until slightly thickened, about 15 minutes!. Remove from heat and stir in the salt and chopped tarragon!. Serve over chicken, fish, or vegetables!.
------Tip: If you don't have tarragon on hand, you can make this rich, creamy sauce with dill, basil, or chives!.
*****SMOKE SAUCE FOR HAMBURGERS
1/2 c!. mayonnaise
1/3 c!. chili sauce
1 tbsp!. pickle relish (or more)
1 tbsp!. liquid smoke
Blend well and store in refrigerator!. A wonderful addition to a charcoaled hamburger!.
*****Kansas City Sauce---Thick, tomato-rich Kansas City sauces are sweeter than those from other regions!. While commercial renditions can overdo the sugar, this version (inspired by the scrumptious Gates Original) balances sweet with spice!.
