When my family has a roast, we want crunchy potatoes!.
Boil the potatoes until slightly soft, then drain the water and put the potatoes in a colander then shake them in the colander and then put a little oil on them!. Roast

Below is my 2-cents worth:

If you want like crunchy french fries white potatoes do best!. Put the potatoes in a pan of cold water, put on a burner and turn on high heat!. Bring the potatoes to a rolling boil, lower to medium heat and once your can poke them with a fork with a little resistance, remove from heat and drain!. Cut them into whatever "french fries shape" you choose!. Place on a lightly buttered cookie sheet!. Drizzle melted butter on top of them and put under the broiler until golden brown!. Remove and add salt, pepper or whatever seasoning you like!.

If you want a crunchy crust for a baked potato just wash the potatoes really well, poke lots of holes in the potatoes with a fork and put in a preheated 400 degree oven for an hour!. Do not wrap them in anything!
They come out with that crisp crust!. You can gently roll/squeeze them in your hands with a mit to help mush the inside of the potato without disturbing the skin!. Then make a small slice in the middle of the length of the potato and simultaneously at the length push them and wallah you have a perfect baked potato to add your goodies to!. Www@FoodAQ@Com

Cut them up into smaller pieces (The size of nickles) and I find they are easier to cook if you microwave them for a short time to make cook a little faster!. Then put cooking oil or my favorite, olive oil, in a fry pan and cook them til they become crispy!. I find that if you add rosemary and Italian spices it tastes every bit better!.Www@FoodAQ@Com

Hey there, they need to have a decent amount of oil on them and you can also sprinkle over some plain flour and coat the potatoes in this before you cook them!. It makes them yummy and crispy on the outside but soft in the middle!.

Crunchy potatoes can be in the form of chips, ruffles and ridges, or fries!. The crispiness comes from deep frying in vegetable oil and fast drying after cooking!. The fries are also cooked in similar oil and deep fried!.Www@FoodAQ@Com
