Question: What is your favorite recipe to pull out when funds are low!?
Answers:
When funds are low I break out the crock pot! Here is a vegetarian chili recipe that's delicious and should cost under $10 for 5-quarts!.

1 can whole kernel corn
1 can tomato paste
1 can black beans
2 cans dark red kidney beans
2 large cans whole peeled tomato
2 medium onions
2-4 jalapeno peppers
1 bunch green onion

Chop up your onions, green onions, and peppers!. Drain and rinse your beans and tomatoes!. Throw them all together in the crock pot!. Season with garlic, pepper, chili powder, cumin, oregano, and a little ground mustard!. Add 2 cups of water!. Stir!. And cook on high for 4-6 hours!.Www@FoodAQ@Com

Stew a chicken with a little onion or onion powder, carrot if you have one, celery if available and some garlic powder!. If you don't have one or any of these ingredients then just add salt and pepper the other ingredients just add a little flavor!.

When the chicken is done take the meat off the bones!. You now have enough meat about 4 cups for two recipes!.

First recipe:

AMISH CHICKEN CASSEROLE

8 oz broad egg noodles
1/2 cup butter
8 oz fresh mushrooms, slice
1/3 cup flour
2 cups chicken broth
1 cup milk
salt and pepper, to taste
1/3 cup freshly grated Parmesan cheese
2 cups cooked chicken, cut in cubes
generous pinch of rubbed sage

Cook noodles as directed on package!. Melt butter and cook mushrooms in a large skillet until lightly browned!. Stir in flour and blend in with a fork or slotted spoon!. Stir in milk and broth and seasonings; whisk sauce constantly until thickened!.
Combine sauce, noodles and chicken!. Adjust seasonings to taste!. Place in a 2 quart casserole dish!. Sprinkle top with Parmesan cheese and bake at 350°F for 30 minutes

Second recipe can be:

chicken tacos use some of the broth instead of water with the taco mix or if you have salsa use salsa instead on the packet of sauce!.

Chicken salad

I just add mayo, onion and celery

Make a gravy with the broth add the chicken and a can of vegall put in a pie crust and you have a potpie!.

Or just make a gravy add the chicken and serve over rice!.

Another thought is have you looked into Angel Ministries!? They sell a box of food for 30!.00 and then have add ons!. but you have to order in advance!.

I forgot about a favorite:

2 cans black beans
1 can rotell
1 onion
saute the onion and add the canned goods!. Let cook a few minutes then mash some of the beans to thicken!. I usually add a little garlic or garlic powder!. Let simmer while you cook some rice!. Serve with some french bread or toast or toasted hot dog or hamburger buns!.Www@FoodAQ@Com

Pizzaioli Soup

1 Medium onion, chopped
2 medium carrots, thinly sliced
1/4 cup chopped parsley
4 T oil
1 clove garlic, minced or pressed
8 to 20 leaves of spinach stemmed
2 can (16 ounces) tomatoes, crushed in puree or diced
1 t sugar, optional
1 can (10oz) chicken broth
2 can water
1/2 cup long-grain rice
1 bay leaf
1/2 t each dried basil and oregano leaves
1/2 t black pepper
Grated parmesan cheese

Suate the onion, carrots and parsley in the heated oil until soft!. Add the garlic and cook 1 to 2 minutes monger!.

Stir in the spinach leaves, tomatoes, sugar, if used and broth, water rice and seasonings!.

Bring to boiling!. Reduce heat and simmer, covered for 40 minutes!. Stir occasionally to prevent sticking!.

Transfer to serving bowl!. Serve with grated Parmesan Cheese!.Www@FoodAQ@Com

Too many recipes to mention when funds are low!. But what I can say is that I look for "managers specials" in the meat dept!.

Only because they have one day left on the meat counter and use that!. I usually buy just about all of them and freeze them and use them to make great meals which I stretch!.

For example!. They will have whole chickens on super sale for 2!.00 dollars!. I bake the chicken and use part of it for current dinner!. Second usage is for chicken salad school lunches and I save the bones!.

I'll take the bones, cook them down with onions, carrots and celery and make broth!. I then make soup with the broth and the small tidbits of chicken meat which was left on the bones!.

You have no idea what I can do!. Being unemployed for many months you learn to utilize so much from so little!.

I make shredded chicken tacos!.

In a skillet (i use cast iron), throw in the boneless skinless chicken breast, taco seasoning, and 1/2 cup of water (sometimes more, depends how much seasoning and how much chicken), hot sauce and garlic powder, (veggies if you want them ie bell peppers, onions, etc!.) cover and put on med-high heat until chicken is tender and cooked through!. Then shred chicken and serve with all the taco fixings!.

Mac and cheese with canned chicken and peas!. mix in one cup of frozen peas with noodles drain and add chicken (drained) with the cheese!.

spaghetti is cheap and good too!. especially when you make your own and freeze portions of the sauce to use later on!.

Spaghetti!. Get the generic sauce for a buck and a box of spaghetti for about the same price!. $2 & you make a lot!. If you have a couple of bucks extra, buy a pound of ground chuck, brown it and throw that in the sauce!.

We make mini pizza's on English Muffins

Toast the muffins then place them on a cookie sheet!. Spoon on some sauce (which is usually left over spaghetti sauce) and then top w/ some mozarella cheese

Bake in the oven until the cheese starts to brown!. (at 350 degrees)Www@FoodAQ@Com

S'not my favorite but, what's wrong with Ramen!?! Get like a box of what!? 24 packs for like around 5-10!? Add veggies for flavor, and different ingredients - egg, ham!.!.!.stuff like that!.Www@FoodAQ@Com
