ive baked cakes using 1/4 cup mayo instead of 1 egg and the cake is better than using eggs!. so use 1/4 cup mayo for each egg you needWww@FoodAQ@Com

There are a lot of different ways to replace eggs in recipes, most of which require egg parts (yolks, whites, egg replacements)!. Two completely non-egg replacements I've had success with in cookie, cake and brownie recipes are 2 Tablespoons of milk mixed with 1/2 teaspoon baking powder, or 1/4 cup vegetable oil!. Using the vegetable oil tends to create a denser texture and more spread, and you don't want to replace more than about 2 eggs in that manner!.Www@FoodAQ@Com

Chocolate Mayonnaise Cake

2 cups flour
1/4 cup + 1 tbls cocoa
1 cup sugar
1 tsp baking soda
pinch of salt
1 cup water
1 cup mayonnaise
1-1/2 tsp vanilla


Combine the first 5 ingred; mix well!. Add water, mayo, and vanilla and stir until smooth!. Pour into a greased and floured 9" sq!. pan and bake at 350 for 25-30 min, or till tests done!. Cool!.
