Has anyone ever used muffin mix to make pancakes before?!


Question: Has anyone ever used muffin mix to make pancakes before!?
I'm a coupon shopper, and have a huge stockpile of about twenty of those bagged muffin mixes- blueberry and banana nut- has anyone made pancakes from these before, and if so- how did you do it!? Were they good!? Thanks!Www@FoodAQ@Com

Yeah I've tried it - If you've got about 20 boxes, just pick one, follow directions but add some extra milk (not a whole lot) coz all you want is to make the mixture more like a pancake mixture consistency than a muffin mixture consistency, (not a whole lot of difference anyway)!. Put a couple of spoonfuls (or whatever size you like) on to your buttered griddle or pan and watch closely, making sure they don't burn!. They are good, better still they are YUMMY and this way you get to make all different types of pancakes!. Top with some fruit or whatever you've got and ENJOY! Www@FoodAQ@Com

Corn Muffin Pancakes
1 (7 ounce) package corn muffin mix
1/2 cup flour
2 tablespoons baking powder
1 egg
1 cup milk
2 tablespoons cooking oil
Add to Recipe Box
DIRECTIONS
Prepare a skillet with cooking spray and place over medium-high heat!.
Whisk together the muffin mix, flour, baking powder, egg, milk, and cooking oil until smooth!.
Pour 1/4 cup of batter into skillet!. Cook pancake until bubbles form on top and bottom is golden brown, 1 to 2 minutes; flip and cook until bottom side reaches same golden-brown color of top of pancake!. Repeat until batter is completely used!.Www@FoodAQ@Com

1 package Betty Crocker? wild blueberry muffin mix
1 3/4 cups water
1/4 cup vegetable oil
2 eggs
3/4 cup maple-flavored syrup


1!. Drain blueberries, reserving liquid; rinse blueberries and set aside!. Stir muffin mix, water, oil and eggs in medium bowl just until blended!. Gently stir blueberries into batter!.
2!. Grease heated griddle if necessary!. For each pancake, pour about 1/4 cup batter onto hot griddle!. Cook about 1 1/2 minutes or until golden!. Turn; cook 1 minute until golden!.
3!. Heat reserved blueberry liquid and syrup!. Serve syrup with pancakes!.
High Altitude (3500-6500 ft) No changes!.

It would work great, just add extra milk and egg and a little more oil than the directions call for!. you want it to be the consistency of pancake batter!. It would be yummy!! Www@FoodAQ@Com
