STEW WEST AFRICAN STYLE

1/2 lb!. salt pork, diced
3 tbsp!. peanut oil
1 lb!. boneless beef chuck, cut into 1 1/2 inch cubes
2 frying chickens, cut in serving pieces
3 large onions, thinly sliced
4 large tomatoes, peeled and chopped
2 large green peppers, seeded and cut in strips
2 bay leaves
2 tsp!. dried crushed red pepper
1/2 tsp!. dried thyme
Salt
Pepper
2 cans (6 oz!.) tomato paste
2 c!. water
1 tbsp!. fresh lemon juice
1 c!. chicken broth
2 c!. long grain rice

Cook salt pork and oil in a large kettle until most of the fat is released from pork!. Brown beef cubes in oil until browned on all sides!. Remove with slotted spoon and set aside!. Saute chicken pieces, a few at a time, until golden brown on all sides!. Remove to a plate!. Saute onions in oil until translucent!. Stir in tomatoes and green peppers!. Add more oil if needed and saute 2 minutes longer!. Add bay leaves, crushed red pepper, thyme, salt and pepper to taste, tomato paste, 1 cup water and lemon juice!. Mix well!. Cook until hot through!. Return beef and chicken to kettle!. Add remaining water and stock!. Bring to a boil!. Reduce heat, cover and simmer 30 minutes!. Add rice and continue to simmer another 30 minutes, or until chicken is tender and nearly all liquid has been taken up by the rice!.

WEST AFRICAN CRUNCHY CABBAGE SALAD

3 c!. finely shredded cabbage
1 c!. diced apples
1 c!. diced cucumber
1/4 c!. raisins
2/3 c!. mayonnaise
1 tbsp!. lemon juice
1/2 tbsp!. vinegar
1/2 tsp!. salt
1/4 tsp!. sugar
1/3 c!. chopped unsalted peanuts

In a medium bowl combine cabbage, apples, cucumber and raisins!. Toss to mix!. In a small bowl blend mayonnaise, lemon juice, vinegar, salt and sugar!. Pour over cabbage mixture!. Toss to coat well!. Sprinkle with peanuts and chill well!.

WEST AFRICAN PEANUT CHICKEN

3 lbs!. chicken breasts or thighs
1/2 c!. cooking oil
2 med!. onions, chopped
2-3 garlic cloves, chopped

SAUCE:

2 c!. chicken broth (heated to simmering)
1/2 c!. crunchy peanut butter
1 (6 oz!.) can tomato paste
Salt, pepper and red cayenne
Pepper to taste
Chopped peanuts

Preheat oven to 350 degrees!. Remove chicken skins; wash and pat dry!. Brown chicken in oil, a few pieces at a time, and remove from heat!. Brown onion and garlic; remove from heat!. Place chicken, onion, and garlic in casserole dish!.

In a medium bowl, blend chicken broth, peanut butter, and tomato paste!. Add seasonings and chopped peanuts; pour over chicken!. Bake covered, 45 minutes to 1 hour or until chicken is tender!. Serve over hot cooked rice!. Serves 4!.

WEST AFRICAN LIME CAKE
2 1/2 tbsp!. butter 2 eggs Juice of 1 lime 1 1/2 c!. flour 2 1/4 tsp!. baking powder Few chopped peanuts (opt!.)

Cream the sugar and butter, add the well beaten eggs and the lime juice, then the flour and baking powder!. Pour into greased and floured 8" square cake pan and bake at 350 degrees for 25 minutes, or until straw stuck into center comes out clean!.

EGUSI SOUP AND RICE

Ingredients for this popular West African dish such as egusi and crowfish can be found at any African or West Indian food store!. 2 lbs!. turkey or smoked turkey 1 1/2 lbs!. dried smoked fish 1 sm!. onion, chopped 1 tsp!. red cayenne pepper (to taste) 1 tsp!. salt Dash of Accent Meat tenderizer (optional) 2 oz!. crowfish 8 oz!. tomato sauce (not paste) 3 tsp!. vegetable oil 8 oz!. ground egusi 4 oz!. chopped fresh or frozen spinach 2 tsp!. Maggie sauce seasoning

Fill large pot with two quarts of water!. Add all the meat and fish!. Add 1 teaspoon of the Maggie sauce, half the onion, a dash of Accent, the cayenne pepper and salt!.

Bring the pot to a boil, then reduce the heat!. Simmer for approximately 30-45 minutes, until the meat is tender!. Stir occasionally!.

Grind the egusi with a little water in a blender to get a paste consistency!. Add the egusi paste, tomato sauce, oil, remaining Maggie sauce, onions and pepper to the pot, plus salt and Accent to taste!.

Simmer for five minutes over medium flame, stirring occasionally!. Add spinach and stir!. Reduce flame to low and simmer for two-three minutes until spinach is cooked!. Serve over a bed of hot rice!.

Yassa Chicken (Poulet Yassa)

Chicken parts (thighs, legs work best)
4 lemons Juiced
cayenne pepper
6-8 white onions sliced
seasoning (garlic, bay leaf)

Soak chicken, sliced onions, seasoning, and lemon juice overnight or at least for a few hours!. Get oil hot in skillet put chicken without the juice and onions!.cook for a few minutes add in onions and juice--
Put in dutch oven and bake until fully cooked!.
