1TB olive oil
1TB butter
1 shallot- minced
2TB flour
1 whole lemon juiced and/or 1/4 cup white wine
12oz chicken stock (good quality carton or preferred homemade)
white pepper (to taste)
salt (to taste)
2 oz heavy cream


In a saute pan add oil/butter and shallot, cook until shallot becomes translucent(do not brown)
As you whisk the shallots add the acid(lemon juice/wine) Reduce for a minute continue to stir!.
Add flour and stir until incorporated with oil/butter mixture
Season with salt and pepper
Slowly add while whisking the chicken stock until smooth
Allow to reduce on medium low stirring occasionally until the volute
has reduced and thickened (10-15 min)
Check the season again and adjust if needed
Finish by whisking in heavy cream off heat and serve

This is a versatile sauce that curry powder, herbs , or sauteed mushrooms etc can be added to vary the flavor!.Www@FoodAQ@Com

1 qt!. milk
1 tbsp!. chicken base
1/2 tsp!. white pepper
1/2 tsp!. paprika
1/2 tsp!. onion powder
1/2 tsp!. granulated garlic
1/2 tsp!. tarragon leaves

QUICK RUE:

3/4 c!. oil
3/4 c!. white flour

Heat milk and chicken base!. Do not boil!. Add seasonings!. When hot slowly add Rue while stirring with a whip, add just enough Rue to thicken!.Www@FoodAQ@Com
