Moist banana bread

1/2 cup (1 stick) Butter, softened
1 1/4 cups Granulated Sugar
2 Eggs
4 tbsp!. Sour Cream
1 1/2 cups Flour, all-purpose (white)
1 tsp!. Baking Soda
1 tsp!. Vanilla Extract
1!.5 cups (2-3) ripe Bananas, mashed (NOTE: Original recipe called for 1 cup and baked a little less, but I usually use more banana and bake it a wee bit longer!. The tracker includes the extra bit of banana!)



Directions

1!. Grease 9" x 5" loaf pan!.
2!. Beat together butter and sugar!.
3!. Add eggs!. Mix well!.
4!. Add sour cream, flour, baking soda, vanilla, and bananas!. Mix well!.
5!. Pour into prepared loaf pan!.
6!. Bake at 350 degrees F for 45 - 55 minutes, or until toothpick in center comes out clean!.
7!. Cool on rack, and wrap in plastic wrap overnight to bring out the moisture in the bread!.
8!. Makes 1 loaf, cut into 14 slices about 5/8" thick each!.

This is my favorite banana bread recipe!. I always substitute Craisins for the nuts, as my boyfriend does not like the nuts!. But really you could omit them all together, or you could substitute anything you want, ie chocolate chips, raisins!. This bread comes out moist and dense!. It is so good warm with jam!

Ingredients:

6 Tbs!. (3/4 stick) unsalted butter, at room
temperature
1/2 cup sugar
1/2 cup brown sugar
2 or 3 very ripe bananas, coarsely mashed
(about 1 1/2 cups)
3 eggs, lightly beaten
1/2 cup buttermilk or cream
2 cups all-purpose flour
1 tsp!. baking soda
1 tsp!. baking powder
1 tsp!. freshly grated nutmeg
1/2 tsp!. salt
3/4 cup Craisins

Directions:

Preheat an oven to 350°F!. Grease and lightly flour a 9-by-5-inch loaf pan!.

In the bowl of an electric mixer fitted with the flat beater, beat together the butter and sugar on medium speed until creamy, about 1 minute!. Add the bananas and eggs and beat until smooth!. Add the buttermilk and beat just until combined!.

In a bowl, stir together the flour, baking soda, baking powder, nutmeg, salt and Craisins, if using!. Add the flour mixture to the banana mixture and beat just until combined!. The batter should be slightly lumpy!. Scrape down the sides of the bowl!.

Pour the batter into the prepared pan!. It should be no more than two-thirds full!. Bake until the loaf is dark golden brown and dry to the touch and the edges pull away from the sides of the pan, 55 to 60 minutes!. A toothpick inserted into the center should come out clean!. Let the bread rest in the pan for 5 minutes, then turn the loaf out onto a wire rack and let cool completely!. Cut into thick slices to serve!. Makes one 9-by-5-inch loaf!.Www@FoodAQ@Com

Banana Bread with Brown Sugar And Cinnamon

1/2 cup Margarine, softened
1 (8 ounces) package Cream Cheese, softened
1 1/4 cups White Sugar
2 Eggs
1 cup mashed Bananas
1 teaspoon Vanilla Extract
2 1/4 cups All-Purpose Flour
1 1/2 teaspoons Baking Powder
1/2 teaspoon Baking Soda
2 tablespoons Brown Sugar
2 teaspoons Ground Cinnamon

Cream the butter or margarine and cream cheese together!. Gradually add the white sugar, and continue beating until light and fluffy!. Add eggs one at a time, beating well after each addition!. Stir in the mashed bananas and vanilla!. Add flour, baking powder, and soda; mix until batter is just moist!.

In a small bowl, mix 2 tablespoons brown sugar, and cinnamon!.
Divide 1/2 batter into two greased and floured 8x4 inch loaf pans!. Sprinkle pecan mixture over batter in pans, and top with remaining batter!.

Bake at 350 degrees F (175 degrees C) for 45 minutes, or until an inserted toothpick comes out clean!.Www@FoodAQ@Com

1!. Move oven rack to low position so that tops of pans will be in center of oven!. Heat oven to 350°F!. Grease bottoms only of 2 loaf pans, 8 1/2x4 1/2x2 1/2 inches, or 1 loaf pan, 9x5x3 inches!.
2!. Mix sugar and butter in large bowl!. Stir in eggs until well blended!. Add bananas, buttermilk and vanilla!. Beat until smooth!. Stir in flour, baking soda and salt just until moistened!. Stir in nuts!. Pour into pans!.
3!. Bake 8-inch loaves about 1 hour, 9-inch loaf about 1 1/4 hours, or until toothpick inserted in center comes out clean!. Cool 10 minutes!. Loosen sides of loaves from pans; remove from pans and place top side up on wire rack!. Cool completely, about 2 hours, before slicing!. Mix all ingredients in a mixing bowl; put into a well greased loaf pan!. Bake at 350° for about 60 minutes, or until a knife inserted in middle comes out clean!.

I like to add a bit of cinnamon to ours, but that is up to you!! And for nuts, I like pecans or walnuts or a mix of both! But this is an easy recipe that is easy prep and clean up and CHEAP!!

No need for a mixer for this recipe!. Preheat the oven to 350°F (175°C)!. With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl!. Mix in the sugar, egg, and vanilla!. Sprinkle the baking soda and salt over the mixture and mix in!. Add the flour last, mix!. Pour mixture into a buttered 4x8 inch loaf pan!. Bake for 1 hour!. Cool on a rack!. if you are looking for something different than ones given run search under wholewheat banana bread got two recipes doing that!. You can't skip extras you don't want to add, and if volume is large add more flour!.Www@FoodAQ@Com
