Lucky You!!!! It's the favorite veg in this house!

My family loves it roasted! Toss it with some olive oil salt and pepper maybe some red pepper flakes too and roast at 350 for about 10 minutes!

also tasty cut pieces to about 2" lengths wrap in a piece of bacon thread on a skewer and grill! (Disneyland does this and it's the best food in the place!!.!.!.It's much cheaper to do at home!)Www@FoodAQ@Com

Roasted Asparagus with scrambled eggs
3/4 pound fresh asparagus
Good olive oil
Kosher salt and freshly ground black pepper
1/8 cup freshly grated Parmesan
6 extra-large eggs
3 tablespoons half-and-half
1 tablespoon unsalted butter, divided
2 to 4 slices 7-grain bread

Preheat the oven to 400 degrees F!.
Break off the tough ends of the asparagus and, if they're thick, peel them!. Place the asparagus on a baking sheet, drizzle with olive oil, then toss to coat the asparagus completely!. Spread the asparagus in a single layer and sprinkle liberally with salt and pepper!. Roast the asparagus for 15 to 20 minutes, until tender but still crisp!. Sprinkle with the Parmesan and return to the oven for 5 minutes, or until the cheese melts!.

While the asparagus is roasting, whisk the eggs in a bowl with the half-and-half, and salt and pepper, to taste!. Melt 1/2 tablespoon of butter in a large skillet!. Cook the eggs on the lowest heat, stirring constantly with a wooden spoon, to the desired doneness!. Remove from the heat, add the remaining 1/2 tablespoon of butter, and stir until it melts!. Check for seasoning, salt and pepper, if needed, and serve with the roasted asparagus and 7-grain bread

Tempura Asparagus
1 bunch asparagus
1 cup rice flour
1 teaspoon kosher salt
1 teaspoon ground coriander
1/2 cup soda water
Sea salt
2 lemons, cut into wedges

Preheat fryer to 350 degrees F!.
Cut the tough and fibrous bottoms off the asparagus and peel stems with a vegetable peeler!. In a mixing bowl, combine flour, salt, and coriander!. Whisk in soda water just until incorporated with the dry ingredients!. Let the batter rest at room temperature for 1 hour!. Dip asparagus in batter and place in fryer until golden brown, about 3 minutes!.

Place on paper towels to drain and sprinkle with sea salt!. Serve with lemon wedges!.

Garlic Roasted Asparagus
2 pounds asparagus, tough ends trimmed, rinsed and patted dry
3 tablespoons extra-virgin olive oil
1 1/2 tablespoons minced garlic
Salt
Freshly ground black pepper
2 teaspoons fresh lemon juice

Preheat the oven to 425 degrees F!.
In a large glass baking dish, toss the asparagus with the olive oil and garlic!. Season lightly with salt and pepper, and toss!. Bake until the asparagus are tender and lightly browned, 15 to 20 minutes, depending upon the thickness of the stalks, stirring twice!.

Remove from the oven and toss with the lemon juice!. Adjust the seasoning, to taste!.

Serve warm or at room temperature

ASPARAGUS - HAM ROLL-UPS

1 lb!. fresh asparagus
2 tbsp!. water
8 slices (1 oz!. each) boiled ham
1 can (10 3/4 oz!.) Campbell's condensed cream of celery soup
1/2 c!. sour cream
1/4 c!. milk
2 tbsp!. chopped fresh parsley
1 tsp!. prepared mustard
Hot cooked rice

1!. Arrange asparagus with tips toward center in 12 x 8 inch microwave-safe baking dish; add water!. Cover with vented plastic wrap; microwave on HIGH 4 minutes or until asparagus is tender, rotating dish once during cooking!. Drain well!.
2!. Divide asparagus spears among ham slices; roll ham around asparagus!. Secure with wooden toothpicks if necessary!. Arrange rolls in same baking dish!.

3!. In small bowl, stir soup until smooth; stir in sour cream, milk, parsley and mustard until well blended!. Pour over ham rolls!. Cover with vented plastic wrap; microwave at 50% power 13 minutes or until heated through!. Let stand, covered, 5 minutes!. Serve over rice!. Makes 4 servings!.

NOTE: Substitute 1 package (10 ounces) frozen asparagus spears for fresh asparagus!. Cook frozen asparagus according to package directions!. Drain well, then proceed as above in steps 2 and 3!.

or cut into bite size pieces, put in a baking pan, drizzle with olive oil and salt and pepper and roast at 350 degrees for 20 minutes!. Eat as is, or make an omelette, or chill and serve with a hollandaise sauce, or make asparagus sushi rolls!. Www@FoodAQ@Com

Stir fry with a little sesame oil and sesame seeds @ the end!. Or steam for just a minute!. Serve with garlic infused mayonaise or hollandaise sauce!. Grill them and serve with herb butter!.

My favorite is shake them in a ziplock bag with olive oil (after you trim the tough ends off if they are thick) Then lay them out on a cookie sheet and sprinkle with sesame seeds!. Broil about 10 minutes until tender and seeds toasted!. Easy and so good!.Www@FoodAQ@Com

if you want to store them then you should blanch them using boiling water followed by an ice bath then put into freezer bags and freeze them!. they will keep for a few months!.Www@FoodAQ@Com

Steam until tender but not mushy!. Marinate them in italian dressing with extra garlic and oil!. Chill and serve!.Www@FoodAQ@Com
