Question: Homemade meringue cookies - shelf life!?
I want to send some homemade meringue cookies by mail but I'm not sure how to package this or how long it's shelf life is!. Should meringue cookies be refrigerated!? Kept at room temperature!?Www@FoodAQ@Com

The key is an airtight container!. Using a ziploc bag and squishing all the air out will not do (if you were thinking that!. LOL) To ship, you should vacuum and seal it!. There are vac seal machines available on the market for the homemaker!.

The eggs are baked, as in any cookie, so you really don't need to specially cool or refrigerate these anymore than you would with any other cookies!. The key is using an airtight container or bag!. ;-) You would definitely use the vac seal machine for lots more things, it would be a worthwhile investment!. You can get these under $100 with accessories if you watch for sales!.

all food items made with eggs should be refigerated or kept in a cool place!. Home made cookies usually last about 5 days as long as they are kept sealed so they wont get rancid or stale!.Www@FoodAQ@Com
