What kind of a meal could I make with half a pan of leftover sweet corn bread?!
I have half an 8" iron skillet left of sweet corn bread!. I also have canned beans, some corned beef, frozen veggies, yellow rice, etc etc etc!. We don't have the money for groceries today and I was wondering if anyone knew what I could make out of these (or some other common household ingredients) for a good supper!? Thanks!Www@FoodAQ@Com

Sitr up your beans, corned beef and veggies and add a dash or two of garlic and/or onion powder!. Warm it up a bit in a baking dish!. Then crumble up your cornbread, stir in one egg and spread it on top of the meat mixture!. Bake it is the oven until it is hot and if you have a little cheese sprinkle it on in the last five minutes!.Www@FoodAQ@Com
Use your cornbread to make a stuffing for chicken breasts (instead of Stove-Top as called for in the recipe, but follow the rest of the recipe to finish)!.
Stuffed Chicken A'la Orange
Prepare Stove Top Stuffing and put a spoonful on each chicken breast and roll it up!.(Or cut a pocket in the chicken breast and fill it instead of rolling it up!.) Dip in melted butter, then roll in crushed corn flakes!. Place in baking dish and spoon orange sauce over the top!. Cover with foil!. Bake at 300oF for about an hour, frequently basting with the orange sauce!. After an hour, take the foil off and bake uncovered an additional 15 minutes!.
Orange sauce:
? c!. sugar
1/4 tsp!. salt
1 tsp!. grated orange peel
? c!. brown sugar
1 T!. corn starch
1 c!. orange juice
Combine all ingredients over low heat on the stove!.

You can also make a cornbread dressing, a cornbread salad, or cornbread mush cakes (crumble cornbread, mix w/ milk and egg, S&P, and form into patties and fry in skillet)!. Serve along w/ heated up corned beef and veggies!.Www@FoodAQ@Com

I would put the corn bread on the bottom of a 9 x 13 and layer it up into a tamale bake !.Spice up a can of tomato sauce with chili powder for the top and sprinkle grated cheese!.Www@FoodAQ@Com
That all sounds good to me maybe leave the rice out!. I would layer it like Shepers Pie!.Start with the corn bread on the bottom and I guess put the rice on top!.Www@FoodAQ@Com
Make a bean chili and eat it with the corn bread!. It might be really good to serve the chili over yellow rice!.
