Boyos

1 package puff pastry sheets
24 ounces feta cheese
2 to 4 tablespoons minced parsley
Freshly ground black pepper, to taste
4 eggs
Flour for dusting
3 tablespoons sesame seeds, or more to taste (optional)

Instructions: Thaw the puff pastry sheets according to package directions!.

Meanwhile, make the filling!. Crumble and mash the feta cheese!. Stir in the parsley and pepper!. Add 3 of the eggs, one at a time, mashing into the cheese until it takes on a pastelike consistency!. Set aside!.

Remove one sheet of puff pastry and lay on a lightly floured work surface!. Using a rolling pin, roll out the sheet until it is about 16 square inches!. Cut the sheet into four equal squares!. Cut each piece vertically into 4 strips!. There will be 16 strips from each sheet of dough!. Repeat with remaining sheet!.

Preheat oven to 350°!. Lightly oil a baking sheet!.

Lightly dust the work surface with flour again!. Take one of the strips of puff pastry dough and roll out into a rectangle approximately 10 inches by 3 inches!. Spread 2-3 teaspoons of the filling along one of the long edges of the rectangle!. Starting at the edge with the filling spread on it, roll the dough toward the other long edge!. Then, starting at one end, roll the dough into a spiral shape!. Use a little water to attach the end of the dough to itself!. Turn it upside down and place it on the baking sheet!. The pastries will spread a little while baking, so leave a couple of inches of space between boyos on the sheet!. Repeat with the remaining strips!.

When ready to bake, beat the remaining egg with 1-2 tablespoons of cold water!. Brush the tops of the boyos with the egg wash!. Sprinkle with sesame seeds (if using) and brush again with the egg wash!.

Bake until golden brown, about 35-40 minutes!.

Borekas

The cheese-mashed potatoes:
1 pound russet potatoes, peeled and quartered
Kosher salt
1/4 cup heavy cream
2 tablespoons unsalted butter
Freshly ground black pepper, to taste
1/2 cup grated Parmesan cheese
1 egg, lightly beaten

The pastry:
1 cup canola oil
2 teaspoons kosher salt, or more to taste
3 1/2 to 4 cups all-purpose flour
1 egg, lightly beaten with 1 tablespoon cold water
1/2 cup grated Parmesan cheese

For the potatoes: Place potatoes in a medium pot and cover with cold, salted water!. Boil potatoes until cooked through and tender for mashing, about 15-20 minutes!. Drain water from pot!. Add cream to the pot of potatoes and mash with a hand-held potato masher!. Fold in butter and season to taste with salt and pepper!. Add Parmesan cheese and egg to potato mixture and fold until completely incorporated!. Set aside!.

Preheat oven to 350°!.

For the pastry: Add oil, 2/3 water and salt to a small saucepan and stir over medium heat!. When the ingredients are fully combined and the liquid starts bubbling, pour the oil mixture into a large mixing bowl and slowly add the flour, 1/2 cup at a time, until you are able to roll the dough in your hands without it sticking!.

Pinch off golf ball-size pieces of the dough and roll into a ball!. Place on a lightly floured surface and with a rolling pin, roll out balls to 4-inch circles!. Spoon 1 1/2 teaspoons of the mashed potatoes on one half of the circle, leaving a 1/4-inch border around the edges!. Fold the unfilled half of the circle over the filling to form a crescent!. Press the seam together with the tines of a fork to seal the pastry!.

Brush the top of each boreka with the egg wash!. Sprinkle the top with cheese!. Repeat with remaining dough!.

Bake on ungreased cookie sheets for 20-25 minutes or until golden brown!.Www@FoodAQ@Com
