Answers:
I roast mine in a shallow roasting tin with plenty of salt to make crackling!.

Try buying it in a piece with the rib bones still in it!. It makes a wonderful roasting joint!. Rub it well with salt and put slivers of cut garlic into it along with crushed juniper berries!. Always roast it on a rack so the heat can make crackling!.

Ignore that twit that said pigs eat their own waste!. Pigs are one of the cleanest animals and most intelligent!.

Whizz some sage and onion stuffing mix in a blender till like fine crumbs, place on a plate, roll pork slices in olive/sunflower oil then roll in stuffing crumbs!. Place on baking tray and cook in med!. oven for 45 -60 mins!.Www@FoodAQ@Com

Wrap the panceta in foil leaving the fat edge exposed!. Sprinkle with salt and grill!. Experiment with time, depending on the thickness!.Www@FoodAQ@Com

i had them for dinner last night they were lush what i did was cook them slowly at first then drizzle a little oil and salt on them about ten min befor taking them out yum yum im hungry now lolWww@FoodAQ@Com
