Answers:
1-1/2 cups cornmeal
1/2 cup all-purpose flour
6 tablespoons sugar
2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon baking soda
2 eggs
1 cup buttermilk
1/4 cup olive oil
3 jalapeno pepper, seeded and finely chopped
Directions:
In a bowl, combine the first six ingredients!. In another bowl, whisk the eggs, buttermilk and oil!. Add to the dry ingredients and stir just until moistened!. Stir in jalapenos!. Pour into a greased 9-in!. square baking pan!.
Bake at 400° for 20-22 minutes or until a toothpick inserted near the center comes out clean!. Cut into squares or wedges!. Serve warm!. Yield: 9 servings!. Www@FoodAQ@Com

3 boxes Jiffy Corn Muffin Mix
1/2 cup vegetable oil
3 cups grated cheddar cheese
1 15-oz can creamed corn
1/2 cup finely chopped sweet white onion
1/2 cup diced jalape?o peppers
3 tsp sugar
2 large eggs, lightly beaten
2-1/2 cups milk or buttermilk

Preheat oven to 375 degrees!. In large mixing bowl, combine cornbread mix and vegetable oil!. Add remaining ingredients in order given!. Mix thoroughly, but do not overmix or cornbread will be tough!.

Pour mixture into greased 9- by 13-inch baking pan!. Bake approximately 1 hour, but start checking at 45 minutes!. Bread is done when knife blade inserted in center comes out clean!.Www@FoodAQ@Com

Make the cornbread like normal(2 boxes), chop up 4 jalapenos, seeded etc, mix in!. Bake as usual!.
OR:

CHIPOTLE MEXICAN CORNBREAD

2 boxes Jiffy Cornbread Mix
3 eggs
2/3 cup milk
1 6 oz can chipotle peppers drained
1 tablespoon pimento peppers
1 can cream corn
1 chopped white onion
1/2 cup vegetable or peanut oil
1 cup grated cheese, any kind

Combine all of the ingredients in a large mixing bowl!. Let mixture rest for about 10 minutes or while oven is preheating to 450°F!.
Bake in a large pan for about 30 to 40 minutes!. Great with chili or beans!.

My own recipe, so yummy!. Jiffy is a lil sweet, but you can use it!. I use a buttermilk cornbread recipe!. This is hardy n could be a meal in itself!.!.!.

triple batch of Jiffy cornbread batter according to package instructions,
1 1/2 lb ground beef
salt n pepper
1 lb cheddar cheese shredded
1 onion chopped
1/4 cup bell pepper chopped
1 can of cream style corn
2 jalapeno peppers from the jar(1/8 cup) more or less depending on your own heat tolerance
***Salsa to serve at the table optional
Make your batter, brown the meat, add onions & peppers n cook till soft!. In a hot iron skillet, poru 1/2 of the batter, then pour the corn over it, layer the meat then the cheese then jalepenos then top with the other 1/2 of the batter!. Bake 350 for 45 min!.Www@FoodAQ@Com

2 boxes of jiffy corn bread mix(prepare acc to box directions)
1 addtl egg
2 to 4 jarred or canned jalapeno peppers, seeded and chopped
1 8 oz pkg of sharp Cheddar cheese
1 small can of white sweet corn very well drained!.
combine all ingredients and bake in an 8 x 10 pan at temp and time that is listed on the box!. this is a moister and cakier bread!. i like with a little dolop of sour cream instead of butter!. i hope you like it!. Www@FoodAQ@Com

one box jiffy cornbread mix-prepare as directed except leave out the milk!.
add to jiffy mix:
two whole jalepenos, seeded and diced!.
one can cream style corn
one bag mexican style shredded cheese
add a little milk or beer if it is too dry, should be pourable but not thin!.
cook in a pre-heated black cast-iron skillet in the oven for best results!.

I just seed and fine chop some jalapenos and throw them in!.
