Chili Mac recipe!.!. It's so good!. I got this receipe from Rachel Ray's Guy's foods cookbook, and my guy loves it!. Be aware though, I usually cut this recipe in half, because it's only for the two of us and I'm still eating it for lunch and dinner the next day with some to put into the freezer!!!! So be prepared!. As for the beer, I use beef broth instead, not to crazy about the beer taste, but it's till good!.

1 pound corkscrew shaped pasta with lines or elbows with lines
2 pounds ground sirloin
2 tablespoons (2 turns around the pan in a slow stream) extra-virgin olive oil
1 sweet onion, chopped
2 jalapeno peppers, seed and chopped
4 cloves garlic, chopped
3 tablespoons (1 1/2 palm fuls) dark chili powder
2 tablespoons (1 palm ful) cumin
2 tablespoons cayenne pepper sauce
Coarse salt
1 cup beer or beef broth
1 (28-ounce) can diced tomatoes in juice
1 (14-ounce) can crushed tomatoes
Chopped scallions, for garnish
Directions
In a large pot, boil pasta until al dente!.

Meanwhile, in a big, deep pot, brown beef in oil over medium high heat!. Add onions, peppers, and garlic!. Season meat mixture with chili powder, cumin, cayenne, and salt!. Cook together 5 minutes, stir in beer or broth, and reduce liquid by half, 2 minutes!. Stir in tomatoes and simmer for 10 minutes!.

Drain pasta!. Add hot pasta to chili pot and stir to coat pasta evenly!. Remove from heat and garnish big bowlfuls of chili mac with chopped scallions and lots of shredded cheddar!

This can be very hot, so taste as you go! You can always add heat!Www@FoodAQ@Com

CHILLI CON CARNE

Serves 3

INGREDIENTS

2 onions
1 tablespoon of sunflower oil
500g of minced beef
2 teaspoons of chilli powder
2 teaspoons of ground cumin
400g tin of plum tomatoes*
1 beef stock cube
400g tin of red kidney beans

METHOD

Peel the onions and chop them into tiny pieces!.

Put the oil into a frying pan on a medium heat!. Add the onion!. Fry the onion for about 2 minutes!. Stir frequently to stop it sticking!.

Put the meat into the pan and fry for 2 to 3 minutes, stirring all the time!. By this time, it should have broken up and be an even colour, with no pink bits!. Add the chilli and cumin, and stir!.

Open the tin of tomatoes!. Pour the juice into the pan!. Chop the tomatoes while they are still in the can (it’s easier than chasing them around the pan)!.

Pour the chopped tomatoes into the pan!. Crumble the stock cube into the pan!. Open the tin of beans and drain off the liquid!. Add the beans to the pan!. Mix thoroughly!. Continue to cook, stirring as the mixture boils, until the sauce has reduced!.

ADDITIONS & ALTERNATIVES

Use minced lamb, pork or turkey instead of minced beef!. Minced pork is cheapest and low (<10%) fat!.

TIPS

Let it cool and reheat it: the flavour improves with reheating!.

* Plum tomatoes can be used either whole or chopped!. It is difficult to stick chopped tomatoes back together again if you need to use them whole!.Www@FoodAQ@Com

Go to the grocery store and get a package of the two alarm chili kit!. They have the chili powder, garlic powder, salt, red pepper, cumin, mais, onion powder, and parsley already portioned out in the right amounts!. Then add two pounds of ground beef and instead of water use tomato juice OR beef stock!. Add in one can of black beans and one can of pinto beans, as well as one can diced tomatoes for texture!. If you want to really make it more 'home-made' put in sliced jalapenos and bell peppers!.

I have made many versions of chili before!. This on is the easiest and it really is a crown pleaser!. Why do all the extra work if people really like this one!?!?Www@FoodAQ@Com
