Can I eat a 7-day-old raw steak?!


Question: Can I eat a 7-day-old raw steak!?
Ok, I've seen several different answers on how old a steak can be when you cook it, ranging from "don't eat it if it's been in the fridge for more than 3 days" to "you can keep it in the fridge for up to 6 weeks and it'll only get more tender with age"!.
I have a 3/4" steak that has been in the fridge for 7 days and I'd like to cook it tonight!. Just a couple of days ago it started to turn brown on the bottom and a little on the top as well!. It is in a Ziplock bag with some air (I tried to get all the air out but I don't have a vacuum), and it is not marinated!.
Can I cook this steak and eat it tonight!?

And if you happen to know, what makes it turn brown!? This will help me understand what to look for!.

First for the easy part!. The brown on the meat is from exposure to oxygen, which as you said is in the bag!. It's not a problem!

The tougher answer is the amount of time it's been in the fridge!. I think you'll know when you get the steak out of the bag whether it's still good or not!.!.!.either by the smell or if it's slimy!.

If it went into the fridge 7 days ago from the freezer is different than if it went into the fridge 7 days ago from the grocery!. If it was from the grocery and you just repackaged it, what was the sell by date!? If you bought it on the last sell by date and then kept it in the fridge, I'd smell it really well to decide! Meats sit in the grocery for about a week anyway!.

aged beef is aged under controlled 34-36 degrees setting and is aged for 16-18 days under those conditions but if it is brown the reason is becuase bacteria is growing on it but if you cook it ,it will be fine trust me it is fine

The brown comes from enzymes that break down meat!. I say cook it to at least medium!. It will probably tender as well!. Www@FoodAQ@Com

The first thing is the smell it!. A strong beefy type flavor is good!. A rancid or sour smell means don't eat it!.

I would say cook it up to night and you should be fine!. And youcan only keep it in the fridge for extended amounts of time if it is well sealed, like in kryovac!.

The brown is just air and also some maufacturers add red coloring it make it look more appealing so thet is just fine!. It's just food dye leaking out!.
