Country-bred squirrels are another matter, however, and if you ever have the chance to try one you might wish to employ the following foolproof preparation method (note to weak-stomached readers--skip to the next question pronto):

Wearing gloves at all times (to protect against other, less insidious, infections), take a sharp knife and cut lengthwise through the squirrel's tailbone from the underside, stopping before you reach the skin of the back!. Next, hold the tail away from the body (the squirrel's) and make slices across the lower back to widen the strip of skin that connects the tail to the body!. You can now peel your squirrel like a banana--grasp the hind legs, step on the tail, and pull slowly, peeling the skin off the head and front legs!.

After cutting the remaining skin from the hind legs, remove the head and feet, then slit the body down the front and remove the internal organs!. The squirrel has small, elusive glands in the small of his back and in the pits of his forelegs--these too must be removed!. Wash the body thoroughly with a mixture of water and vinegar!.

So, your mouth is watering, right!? OK, now you can cook the squirrel meat just as you would cook chicken, using whatever your favorite recipe may be!. (Shake 'N' Bake, however, is not in keeping with the true spirit of the endeavor!.) The tastiest squirrels are the grey ones, red squirrels being both too skinny and too gamey!. For a more tender squirrel, hang the cleaned body up by what's left of the legs for two or three days!.

Cook it:
BBQ Squirrel
4 squirrels, quartered
~ 3 tbsp salt
~ 2 tsp pepper
~ 1 tsp garlic powder
~ 1 tsp onion powder
~ your favorite dry rub
~ 15 charcoal briquets
~ 3 handfuls hickory chips
~ your favorite bbq sauce


In a large pot, boil the squirrel in water seasoned with the salt, pepper, garlic powder and onion powder for 1 hour or until tender!.

In the meantime, soak the hickory chips in water!. Light the charcoal and let them get white hot!. Place them to one side of your grill!.

Remove the squirrel from the water and pat dry!. Coat with your favorite dry rub!.

Add one handful of wood chips to the hot coals!.

Place squirrel on grill across from the hot coals!. Cover and smoke for 1 hour!. Add a handful of wood chips every half hour!.

Add last of the wood chips and baste squirrel with bbq sauce!. Smoke for another half hour basting another 3 - 4 times!.

Serve with mashed potatoes, sweet corn and buttermilk bisquits!.

Squirrel Stew


~ 3 squirrels, cleaned and cut up
~ 1/4 cup all purpose flour
~ 1 teaspoon salt
~ 1/2 teaspoon pepper
~ 2 slices bacon
~ 2 tablespoons butter
~ 5 cups of water
~ 1 - 28 oz can whole tomatoes
~ 1 chopped onion
~ 1 heaping tablespoon of brown sugar
~ 2 potatoes, peeled and cut into 1/2 inch cubes
~ 1 - 10 oz package frozen lima beans
~ 1 cup frozen corn
~ 3 tablespoons all purpose flour


Combine 1/4 cup flour, salt and pepper!. Coat the squirrel pieces!.

In a Dutch oven, combine bacon and butter over medium heat until butter melts!. Add squirrel and brown!.

Add water, tomatoes, onion and brown sugar and bring to boil!. Reduce heat, cover and simmer for 1 1/2 to 2 hours, stirring occasionally!.

Remove squirrel pieces and let cool!. Remove meat from bones!.

Add meat, potatoes, beans and corn to Dutch oven!. Heat to boiling, reduce heat and cover!. Simmer until potatoes are tender!.

Mix 3 tablespoons of flour with 3 tablespoons of cold water, then stir into stew!. Heat to boiling!.

Cook over medium heat, stirring constantly, until thickened, bubbly!.

Serve with warm rolls and enjoy!

Squirrel with Rice and Potatoes

2 old squirrels, cut up
Fat
1 onion, chopped
1 green pepper, chopped
1/4 cup chopped celery
1 clove garlic, chopped
1 cup uncooked rice
1 green pepper, chopped
3 med!. potatoes, chopped
Salt and pepper
Water

Brown squirrels in skillet with small amount of fat!. Place squirrel in pressure cooker and cook under pressure for 15 minutes to tenderize!. Sauté onion, green pepper, celery, and garlic in drippings in skillet; add rice, squirrel, potatoes, seasonings, and enough liquid to cook rice and potatoes!. Cover; simmer slowly until tender
