Yes it does really mean 50% cream and 50% milk!. You can substitute canned milked but you will have a richer result if you are willing to use the 50/50 substitution!.Www@FoodAQ@Com

Try using a can of Carnation evaporated milk, full fat is best or 2% will work, but not for fudge!. Here in Canada we have an in between one at 5% BF and is nice for soups and things just a bit more than our 3!.25% Homogenized milk is!.Www@FoodAQ@Com
