How can I stop my pancakes from being undercooked in the middle?!


Question: How can I stop my pancakes from being undercooked in the middle!?
This is not trivial!. I've already thought a lot about this!. I'm using Krusteaz mix and it's quite fresh!. I've got an electric griddle and I've tried every temperature from 325°F to 375°!. I've cooked plenty of pancakes before, so I know how to cook them!. On the lower temperatures, they seem to be taking forever (a really, really long time)!. But the middle is still a little too wet for my taste (not gooey, but a tiny bit raw)!. On the high temperature it's the same thing!. There's never outright totally raw in the center!. They just taste kind of wet and raw and I don't like that!. Www@FoodAQ@Com

well from a pros stand point you can do two things
1 get a new griddle or do it in a pan on the flame!.!.!.!.or
2!. add a little more water tho the mix!. this will allow for heat to go through the batter more quickly!.!.!.!.this will leave your cakes less fluffy though!.!.!.!. in the end in you really like panckes and put this much effort into perfecting them you should learn how to meke them from scratch and not inconsistent box mixes!.!.!.trust me on this!.!.!.!.!.once you get a recipe you like, you ll memorize at you will a pancake pro Www@FoodAQ@Com

what i do is first take the mix put it in lukewarm water or warm then stir till it slowly gets harder to stir then pour it using a spatula press the pancake evenly to flatten it then when the bottom part stop sizzling flip it over the side should be white repeat the same step on both side when they get a golden brown color or steams a lot the pancake is ready works for meWww@FoodAQ@Com

Okay, i made pancakes all the time =), and what u do is this:

1!. put the pancakes on the pan, your own size, your choice!.

2!. once it bubbles flip it 3!. then after its cooked the other side for a little
while, take a fork and stab the middle, then smush the pancake with the spatchla, slightly, the batter may squeeze out and u know it needs to be cooked more!. I hope i helped! :-)Www@FoodAQ@Com

thin your batter with water or milk 1 T at a time until it right consistency,when you pour it on the griddle it should be flat and even !.375 is a bit high!.!.!.350 would be better Www@FoodAQ@Com

take care of temperature on your griddle, and also make sure the batter have the right consistency!.Www@FoodAQ@Com

make them kind of thinner but not too thin on sort of a medium/high temperature so they'll cook perfectly :)Www@FoodAQ@Com

Try making them from scratch!. The mixes are just the dry ingredients, there is nothing magical about them!. Www@FoodAQ@Com

FIRST, USE HUNGRY JACK THEN, WAIT FOR THE BUBBLES BEFORE YOU FLIP THEM OVER AND WHEN U DO FLIP DO NOT SMASH THE PANCAKE!.Www@FoodAQ@Com

a pancake that is too thick will leave the middle part uncooked!. so make it thinnerWww@FoodAQ@Com

I've never used Krusteaz, but I swear by Bisquick!. If your batter is too thick, which happens on standing, add more milk or water to the batter, as another poster said, a spoonful at a time will do!. To make them super light and fluffy, there's an alternate recipe that adds a bit more lightness:

Totally Awesome Pancakes

Prep Time:20 min
Start to Finish:25 min
Makes:14 pancakes

2cups Original Bisquick? mix
1cup milk
2tablespoons sugar
1teaspoon vanilla
2eggs

1!.Heat griddle or skillet over medium-high heat or electric griddle to 375oF; grease with cooking spray, vegetable oil or shortening!. (Surface is ready when a few drops of water sprinkled on it dance and disappear!.)
2!.Stir all ingredients until blended!. Pour by slightly less than 1/4 cupfuls onto hot griddle!.
3!.Cook until edges are dry!. Turn; cook until golden!.

Edit: this is the one I really love though!

I don't really use a griddle!. In fact, I don't even have a griddle!. I just use a skillet!. I don't put any butter or oil in my pancakes, if that's what you meant, I just oil the pan a little with some canola oil or some non stick spray!. I put water and sometimes eggs in my pancakes!. I cook them on high because i'm hungry and I don't have time to wait for these pancakes to get ready!. They always come out good!. Well, not all of the time!. The first one I make is messed up most of the time!. That rumor is true, I don't know why!. I wish I had some pancakes right now!.!.!.Www@FoodAQ@Com
