PORK FRIED RICE
Servings: Serve 4-6!.
Ingredients:
400 g (13 oz) pork fillets
1/3 cup vegetable oil
4 free-range eggs, lightly beaten
1 small red onion, finely diced
1 tablespoon finely diced ginger
2 teaspoons white sugar
2 tablespoons hoisin sauce
2 tablespoons light soy sauce
1 tablespoon malt vinegar
1/4 teaspoon sesame oil
4 cups steamed rice
2/3 cup finely sliced spring onions (scallions)
Preparation:
Using a sharp knife, cut pork fillets into 5 mm (1/4 inch) slices, then cut into 5 mm (1/4 inch) strips and set aside!.
Heat half the oil in a hot wok until surface seems to shimmer slightly!. Pour beaten eggs into wok and leave to cook on the base of the wok for 10 seconds before folding egg mixture over onto itself with a spatula and lightly scrambling for about 1 minute or until almost cooked through!. Carefully remove omelette from wok with a spatula and drain on kitchen paper!. Set aside!.
Heat remaining oil in hot wok and stir-fry onion and ginger for 30 seconds!. Add sugar and stir-fry for 30 seconds!. Add pork and stir-fry for a further 30 seconds!. Stir in hoisin sauce, soy sauce, vinegar, and sesame oil and cook, stirring, for 1 minute!.
Toss in rice and reserved omelette and stir-fry, using a spatula to break up the egg into smaller pieces, for 1 minute!. Lastly, add spring onions and stir-fry for a further 30 seconds or until well combined and rice is heated through!.
Transfer rice to a platter and serve!.
NOTE:
Because pork is rather rich, add a touch of hoisin sauce—the pork can stand up to it!. The malt vinegar balances out the flavors, cutting through the richness and sweetness!.
CHINESE FRIED RICE DELUXE
Servings: Serves 4!.
Ingredients:
6 tablespoons lard or cooking oil
2 eggs
1 teaspoon salt
2 scallions, chopped
1/2 cup fresh shrimp, shelled, deveined and diced
4 cups cold, cooked rice
1/2 cup cooked peas
1/4 cup canned diced bamboo shoots
1/4 cup diced boiled ham
1/2 cup diced cooked chicken
1/2 cup diced Chinese roast pork or left-over roast beef or veal
2 tablespoons soy sauce
Preparation:
Heat 2 tablespoons lard or cooking oil!. Beat eggs with 1/2 teaspoon salt and scramble in oil until firm, breaking into small pieces!. Remove and reserve!.
Heat remaining oil!. Add scallion and shrimp and remaining salt!. Cook until shrimp shows pink!. Break up lumps of cold cooked rice!. Add to shrimp!. Stir until rice is heated and the grains of rice are separated!.
Make a hole in the center of the rice!. Add all the rest of the ingredients except soy sauce!. Stir until thoroughly heated and mixed!. Sprinkle soy sauce over rice and mix evenly through!. Salt and pepper to taste!. Garnish with additional chopped scallions if desired!.
NOTE:
The secret of making fried rice lies in the use of cold, cooked rice!. Freshly cooked rice will only produce a sticky mess!.

1st of all u need to cook the rice and let it cool off before u can make fried rice or it will be fried mush
