There are lots of good answers here!. Use your favorite cheese, if you want to!. Personally, I prefer mine without cheese!.

I call it cheese bread, when adding cheese to garlic bread!. Here are some of my favorites - cheddar, jack, pepper jack, swiss, havarti, asiago, romano, and parmesan!. Consider using more than one cheese, which is even tastier!.Www@FoodAQ@Com

You can use almost any other cheese you would like!. Romano, Fontina!.!.!.
Normally, garlic bread does not have any cheese on it!. If you make your own garlic butter, and toast the bread just right, it will be delicious without cheese!. Sprinkle a tiny bit of paprika on for color and even some finely chopped fresh basil!.Www@FoodAQ@Com

Do you mean I've been doing it wrong all these years!? I never use cheese of any type, brand, trade or religion!. I first skin some garlic, about a full head and put it through a blender until it is finely chopped then I mix this into my bread dough!. Result when my bread is baked - Garlic Bread!. Garlic bread usually doesn't have cheese on it!. It's usually made from bread sticks or pizza bases spread with a mixture of butter, crushed garlic and salt!. You can add herbs to this (parsley, thyme, oregano etc), but don't have to!.

You could substitute Romano, or whatever you have on hand!. You can also leave it off altogether!. On the other hand, Gorgonzola would be great!.Www@FoodAQ@Com

You can use whatever you want!. If I didn't have parmesan, I would use Romano or Mozzarella!. Www@FoodAQ@Com
