Raspberry Cheesecake Muffins

1 cup of fresh raspberries
3 eggs
1 cup of sugar
1 3 oz pkg cream cheese
6 tablespoons of butter
1 ? teaspoons of vanilla
2 ? teaspoons of baking powder
2 cups of flour
? teaspoon of salt
Instructions:
Preheat oven to 400°F!.

Grease muffin tin or line each with paper cases!.

In a bowl, beat together the cream cheese with ? cup of sugar, 1 egg and ? teaspoon of vanilla until completely smooth!.

Put to one side for later!.

In a saucepan, combine the butter, milk and remaining vanilla stir continually over a medium heat until the butter has melted!.

Cool the mixture until warm to touch, then beat in the remaining 2 eggs, 1 at a time!.

In a large bowl, combine the baking powder, flour, salt, and remaining ? cup of sugar!.

Add butter and milk mixture to the flour and baking powder mixture and stir until blended!.

Add the raspberries and gently fold into the mixture!.

Divide the mixture equally among each muffin tin/paper case!.

Spoon approximately 2 teaspoons of cream cheese mixture on top of each of the muffins!.

Bake about for about 20 minutes or until the muffins are springy but firm!.






Mini Chocolate Lava Cakes



1 ? cups semisweet chocolate chips
1 stick butter
1/2 teaspoon vanilla extract
1/2 cup sugar
3 tablespoons flour
1/4 teaspoon salt
4 eggs
butter cooking spray
1 tablespoon cocoa powder
8 strawberries, cut into slices- optional

Preheat the oven to 375 degrees F!.
Microwave the chocolate and butter in the bowl for 2-3 minutes or until melted!. Stir in vanilla!.
In a large mixing bowl, combine sugar, flour and salt!. Sift these into the chocolate and mix well with electric hand mixer!. Add eggs one at time, fully incorporating each egg before adding the next!. Beat at high until batter is creamy and lightens in color, approximately 4 minutes!. Chill mixture for at least 2 hours!.
Coat the top and each cup of the muffin tin with cooking spray!. Dust with the cocoa powder and shake out excess!. Spoon mixture into pan using a 4-ounce scoop or ladle!. Bake for 10 to 11 minutes!. Outsides should be cake-like and centers should be gooey!. To remove: flip over tin onto a hard surface covered with wax paper!. Top with strawberries!.
*If serving, melt ? cup of semisweet chocolate chips and then drizzle over muffins; sprinkle with powdered sugar!.Www@FoodAQ@Com

ENGLISH TOFFEE
REFRIGERATOR DESSERT

4 c!. corn flakes, crushed
1/4 c!. sugar
1/3 c!. butter, softened
2 tbsp!. finely chopped nuts

FILLING:

1/2 c!. butter
1 c!. sifted powdered sugar
2 sqs!. unsweetened chocolate, melted
1 tsp!. vanilla
3 eggs

Crush corn flakes; add 1/3 cup butter, sugar, and nuts!. Mix well!. Reserve 1/2 of crumb mix!. Press rest into 8 x 8 x 2 inch pan evenly and chill!. Measure 1/2 cup butter and powdered sugar into mixer bowl; mix on low until combined!.

Add cooled, melted chocolate and vanilla; mix well!. Add eggs, one at a time, beating about 5 minutes after each one!. Spread evenly over crust!. Sprinkle remaining crumbs on top!. Chill several hours!. Cut into 12 squares!.Www@FoodAQ@Com

1-1/2 cups graham wafer crumbs
1/2 cup butter, melted
1 pkg!. (6 serving size) coconut cream pudding and pie filling
1 pkg!. (250 g) cream cheese
2 medium bananas
1 can (10 oz!.) mandarine orange segments, drained
1 tub cool whip, thawed (1 liter size)

Mix graham crumbs and butter!. Press firmly into bottom of 13 X 9 inch pan!. Bake at 350oF for 5 minutes!. Cook pie filling mix as directed on package for microwave or top of stove!. Beat cream cheese to soften then whisk in hot filling!. Cover with plastic wrap and chill about 30 minutes!. Slice bananas over crumb crust!. Stir pudding and fold in oranges, then spoon over bananas!. Spread whipped topping over filling!. Chill 3 hours!. Cut into squares!. Makes about 12 servings!.
*TIP* Substitute 2 medium oranges, peeled and sectioned, for the canned mandarines!.

PETITE CHERRY CHEESE
2 8-oz pkgs!. cream cheese, softened
3/4 c!. sugar
2 eggs
1 T!. lemon juice
1 tsp!. vanilla
24 vanilla wafers
1 can cherry pie filling
Beat creama cheese, sugar, eggs, lemon juice & vanilla until light and fluffy!. Line muffin tins with paper cups; place a vanilla wafer in bottom of each!. Fill the cups 3/4 full of cream cheese mixture!. Bake at 375 for 15-20 min, or until set!. Top each with about 1 TB!. pie filling and chill !.!.!. Makes 24Www@FoodAQ@Com
