I don't think the colour is that significant, but then I'm not a great believer in the 'presentation' of food, Im a firm believer in the taste of food, but not prissy arty 'presentation'!. yes the food should look attractive and presentable but adding things to the dish because of look not flavour is daft in my books!.!.!. its a silly hangover from nouvelle cuisine

It is calf meat!. Very pale in colour, looks a bit like chicken but slightly more grainy!. There is a lot of controversy as to how it is produced!. Calves are taken straight from the mother and put in tiny crates in which they can barely move and are fed only milk!. I would prefer to use turkey breast meat flattened out and crumbed!. Tastes almost the same!. Both veal and turkey very bland meats!.Www@FoodAQ@Com

Veal is a baby calf that is raised in a small box, never allowing the cow to get to large and making the meat tender!. Ask your local butcher if he has has any veal cutlets!.
