Elegant Baked Eggs
Prep Time: 5 minutes
Oven Time: 15 minutes
Serves 1
Ingredients:
1/2 cup blanched spinach, well drained
2 Large Fresh Eggs
1 tablespoon crumbled cooked bacon
1/2 tablespoon minced parsley
1 tablespoon cream
Directions:
Preheat oven to 40O' F!. For each serving, butter an oven-proof baking dish!. Place spinach in bottom of dish!. Break eggs over the mixture and sprinkle with bacon and parsley!. Drizzle with cream!. Bake 10 to 12 minutes until yolks are thickened!.
Cooking Tip
To blanch fresh spinach, place 1 teaspoon oil in non-stick fry pan over high heat!. Add spinach and 1 tablespoon water, cover and let cook about 1 minute!.
Variations
Bake eggs on a bed of any vegetables, ratatouille, sauteed zucchini, mushrooms, re fried beans, hash, crushed tomatoes!. Top with grated cheese!.
Berry-Stuffed French Toast
Some days are meant for luxuriating in the unplanned expanse of the morning!. French toast is tailor-made for those days!. Assemble the dish the night before and you'll be ready for a leisurely morning meal whenever it suits you!. For the bread, choose a rather wide loaf so there's plenty of room to cut a pocket and spoon in the sweetened cream cheese filling!.
Yield: 4 servings
1 loaf Italian or French bread
8 ounces organic reduced-fat cream cheese, at room temperature
4 tablespoons confectioners' (powdered) sugar
1/2 teaspoon almond extract
1/3 cup dried blueberries
1/3 cup dried cranberries
4 pasture-raised or organic eggs
2 pasture-raised or organic egg whites
1-1/2 cups organic 2% milk
1 teaspoon vanilla extract
Pinch of salt
Cut off and discard a small diagonal slice from each end of the bread!. Cut the bread on a diagonal into about ten 1"-thick slices!. Cut a slit through the top crust of each slice to form a deep pocket!.
In a medium bowl, mix together the cream cheese, 3 tablespoons sugar, and the almond extract!. Stir in the blueberries and cranberries!. Spoon the filling equally into the bread pockets and lay the stuffed slices of bread in a shallow 4-quart baking dish, such as a 15" x 10" dish!.
Clean and dry the bowl and then use it to whisk together the eggs, egg whites, milk, vanilla extract, salt, and the remaining 1 tablespoon sugar!. Pour the mixture evenly over the bread!. Turn the slices to coat completely!. Let stand for 5 minutes or cover and refrigerate up to 8 hours (overnight)!.
Coat a nonstick griddle or skillet with cooking spray and heat over medium heat!. When hot, cook the bread in batches until browned on each side, about 4 minutes per side!. Serve immediately!.
Helping Hand: For a simple blueberry syrup, toss about 1/4 cup fresh blueberries into a small microwavable pitcher with 1/4 teaspoon ground cinnamon and 1/2 cup pure maple syrup!. Microwave on high until heated through, 30 to 45 seconds!. Or top the toasts with blueberry jam instead!.

1/2 cup butter
2/3 cup lukewarm water
2 tablespoons sugar
2 envelopes (1/2 ounce or 4 1/2 tsp) dry yeast
3 eggs (beaten)
6 cups flour (approximately)
oil
melted butter
cinnamon and sugar mixture (optional)
Glaze (optional):
combine all ingredients and beat until smooth:
2 cups powdered sugar
3 tablespoons warm milk
2 tablespoons butter
1/2 teaspoon vanilla
Scald milk!. Stir in the 1/2 cup sugar, salt, and 1/2 cup butter!. Pour lukewarm water into mixing bowl!. Stir in the 2 tablespoons of sugar and the yeast!. Let stand about 5 minutes!. Then add milk mixture and beaten eggs!. Blend well!. Add 3 cups of the flour, beat until smooth!. Stir in about 3 cups additional flour!.
Turn dough onto a lightly floured surface!. Knead until satiny and smooth!. Place in greased bowl and brush top lightly with oil!. Let rise in warm place until double (about two hours) then punch down and turn onto a lightly floured board!. Roll out to 1/4" thickness!.
Spread liberally with melted butter and sprinkle with the cinnamon and sugar mixture (optional, use anything you like, example raisins and nuts) Roll as for jelly roll!. Using a dough cutter or a knife cut into 3/4" slices!. Place slices onto greased sheet pan and flatten with your hand or lightly with a rolling pin!. Let rise about one hour!.
Preheat oven to 350 F!. Bake 15 - 20 minutes or until done!. Remove from oven and brush with glaze while still warm!. Sprinkle with sliced almonds if desired!.
