Anyone have a good recipe for a salad without greens?!
Having supper with family tomorrow and my MIL can't have any greens- no spinach, lettuce etc!. Does anyone have a good recipe for a veggie salad of sorts without theseWww@FoodAQ@Com

What about pasta or potato salad!? Or cucumbers in sour cream!? Or cucs and tomatoes in vinegar/sugar/water!? Or cubed tomatoes with a little Marzetti slaw dressing tossed on them and a little basil/parsley/chives!?
Tell me what else you're serving and I'll type a recipe for a salad that would go with it!
If these don't strike you, make a Jello salad with 7-Up or ginger ale for the cold water and stir in either grated carrots/raisins/crushed pineapple or add chunk pineapple and grapes!.
EDIT: This salad would go with the pasta and marinara or go for the cucs in sour cream!
TOMATO AND CUCUMBER SALAD - from my grandmother
Tomatoes, washed and sliced
Cucumbers, peeled, scored with fork tines, and sliced
Green Onions, sliced
Fresh Parsley, chopped
Green Peppers, sliced or diced (optional)
Fresh Chives, chopped (optional)
Fresh Basil Leaves, chopped (optional)
Put all fresh veggies and herbs in a salad/serving bowl!. Make sugar-vinegar-water solution, but make sure it is chilled!. Pour over veggies at least 1/2 hour before serving and refrigerate!.
Short-cut on making sugar-vinegar water:
Put 1/2 cup sugar and 1 cup cider vinegar in 2 cup Pyrex measuring pitcher and heat on High in microwave until sugar is dissolved!. Add enough ice cubes to add about one cup additional liquid!. When these melt, the solution will be ready to be put on the veggies!.
Alternate: Use fresh zucchini instead of cucumber!.
For the sour cream sauce for cucs, just add a little vinegar (cider or red wine) and a little olive oil (optional) and a little sugar plus fresh chopped chives/parsley if you have it!. The stir this into the sliced cucs!. Add fresh onion also if you like it (we do!)!.Www@FoodAQ@Com

You have several choices if Mother dearest can have the following
Broccoli
Cauliflower
Carrot
Broccoli, bacon, red onion, raisins, mayo, sugar and vinegar!. Or use Cauliflower in place of broccoli (reciep follows)
Carrot, raisin, mayo
Broccoli Salad
2 Cups fresh broccoli broken into bite size pieces
1/4 - 1/2 C chopped red onion
1/2 - 1 C raisins
1 lb bacon cooked, drained, crumbled
1 C mayonaise
2 Tbls apple cider vinegar
1/3 - 1/2 C sugar
1/2 C dry roasted peanuts crushed
Rinse and drain broccoli!. Crush peanuts with a rolling pin or other heavy object, Mix mayonaise with vinegar and sugar!. Put all ingredients into bowl and toss with mayonaise mixture!. Cover and let sit in refrigerator 4-5 hours stirring occassionally!. Adjust the amount of sugar depending on the amount of raisins used!. You may also substitute sunflower seeds for the peanuts!.

Fresh carrots peeled and grated or ground!. Raisins 1/3 - 1 C and mayonaise!. Grate or grind carrots, add raisins and enough mayonaise to moisten!. This can also have diced apple or pineapple added if you desire!. The number of carrots is dependent on the number of people you want to feed!. I usually do 1 medium to large carrot per person unless I know someone really likes carrots than I will do 2 carrots/person!.
Is MIL allowed cabbage!? You can do a coleslaw in that case!.
Thinly slice 2 lbs of cabbage (green works best) shred 2 carrots, dice 1 green pepper!. Toss together!. Mix 1 C Miracle Whip with 1/3 C sugar an 3 T cidar vinegar!. Cover and refrigerate at least 3 hours!. Stir well before serving!. The dressing will not look like it is enough but it will be plenty after the time it sits!.
Classic Italian salad would be fresh tomatoes, fresh mozzerella cheese both sliced (medium size slices please) and placed on plate
drizzled with olive oil and if desired balsamic vinegar!. Scattered fresh basil leaves over all, cover with plastic wrap and let sit 1 hr in the refrigerator, remove 20 min before the meal to reach room temperature!. If desired you could line the plate with lettuce leaves that MIL would not have to partake of!.

I threw together this on night on the fly and my family loves it!.I chopped up 3 green onions and 4 roma tomatoes ,added salt and pepper then poured on about 1/2 cup of Wishbone Italian dressing!.Then I just let it chill!.Www@FoodAQ@Com
Beef tomatoes slice lightly spinkle salt and pepper over tomatoes!.
Slice mozzerrella balls and lay them on a plate sprinkle a little olive oil!. You may eat with some nice bread!.

try a cucumber tomato salad!. slices of cucumber, slices of tomato or cherry tomatoes, dressing, spices, and add some sesame seeds or sunflower seeds as an added touch!.Www@FoodAQ@Com
